Baked Trout.
Remove head and tail and make two or three slices to the bone in each side.
Sprinkle with salt and some lemon juice. Place on, a bed of lemon slices, (from the lemons you have squeezed for the juice) on a piece of tinfoil.
Fold into a parcel and bake at 170C for about 15 minutes
sprinkle a bit of pepper and salt .
For baked fish I like to add a little Italian dressing before baking.Keeps the fish moist and really tasty too.
My husband and I love Tilapia. We like to put it in a 9x13 and then put about 2 butter slices per piece of fish on it. Then we usually slice an onion and lay the rings on top. Then we sprinkle the fish and onions with Tony's, garlic powder, sometime lemon pepper, parmesan cheese, and top it all off with some sprinkles of dried parsley flakes for color. Bake it according to the given directions. We love this recipe with roasted garlic mashed potatoes, Ranch-style beans, and some kind of roll or biscut.
I have done it both ways. If you have a firm fish it is great on the grill with a light marinade and some dry seasonings. The last time I had fish I pan fried it. I marinaded a halibut fillet in a lemon pepper marinade first. Both were great.

3/4 cup chopped green pepper
3/4 cup chopped celery
1 tablespoon dried parsley flakes

1 cup V-8 juice
1 pound walleye fillets or other whitefish
In a saucepan, combine all but fish; bring to a boil. Reduce heat; simmer, uncovered, until vegetables are crisp-tender, stirring occasionally, about 5 minutes.
Place fish in a greased 13x9x2" baking pan. Pour vegetable mixture over the fish.
Cover and bake at 350°F for 30 minutes or until fish flakes easily with a fork.
if you wanna grill this just put it all in foil if its a whole fish and you wanna grill it put some rosemary and salt and pepper(better if you use sea or kosher salt in side it and the out side to and wrap it up in foil and grill or bake it the nice thin is no messy dish to clean if you have fish steaks just salt and pepper or lemon and grill up works well with Salmon
Grill-Fried Fish
4 fish fillets (cod, red snapper, etc.)
2 cups instant mashed potatoes
2 tablespoons butter, melted
2 tablespoons lemon juice
1 tablespoon olive oil
2 cloves garlic, minced
PREPARATION:
Preheat grill. Combine melted butter, lemon juice, olive oil and garlic in a shallow dish. Dip fish fillets in butter mixture and roll in potato flakes to coat. Wrap each fillet in aluminum foil and place on medium-hot grill.
Baked Fish
1 1/2 to 2 pound fish fillets (orange roughy, catfish, haddock, etc.)
1 can cream of mushroom soup or cream of celery soup
1/4 cup milk
1/4 to 1/2 cup grated cheese
1 1/2 cups soft bread crumbs tossed with 3 tablespoons melted butter
PREPARATION:
Heat oven to 400°. Butter a shallow baking dish.
Arrange fish in prepared baking dish. Combine soup with milk in a saucepan over medium low heat and heat through. Pour soup mixture over fish. Sprinkle with grated cheese and buttered bread crumbs.

MaMa's Supper Club Tilapia Parmesan
2 lbs tilapia fillets (orange roughy, cod or red snapper can be substituted)
2 tablespoons lemon juice
1/2 cup grated parmesan cheese
4 tablespoons butter, room temperature
3 tablespoons mayonnaise
3 tablespoons finely chopped green onions
1/4 teaspoon seasoning salt (I like Old Bay seasoning here)
1/4 teaspoon dried basil
black pepper
1 dash hot pepper sauce
Preheat oven to 350 degrees.
In buttered 13-by-9-inch baking dish or jellyroll pan, lay fillets in single layer.
Do not stack fillets.
Brush top with juice.
In bowl combine cheese, butter, mayonnaise, onions and seasonings.
Mix well with fork.
Bake fish in preheated oven 10 to 20 minutes or until fish just starts to flake.
Spread with cheese mixture and bake until golden brown, about 5 minutes.
Baking time will depend on the thickness of the fish you use.
Watch fish closely so that it does not overcook.
Makes 4 servings.
Note: This fish can also be made in a broiler.
Broil 3 to 4 minutes or until almost done.
Add cheese and broil another 2 to 3 minutes or until browned.
You will not regret trying this :)
Don't do EITHER!!!
We eat so much fish and the best and easiest way to cook it is to PAN ROAST it.
Get a non stick pan. let it heat at Med High for about 3 mins.
take your fish and season with salt & pepper or garlic salt or whatever you like.
Put fish in the pan and don't touch it for 4 mins. (if you touch it and play with it, it won't sear in the juices)
Then flip it over and cook for another 3 mins.
This is assuming your fish is about 1 inch thick.
Trust me!! We live near the beach and spend a fortune on Halibut, Seabass, Ahi and I cannot afford to ruin it.
I would recommend doing an internet search like this:
"pan roasting Halibut" or whatever kind of fish it is and you will get very specific directions.
