Anyone have a good meatball receipe?

My husband loves spaghetti and meatballs.... Since it's father's day, I'm going to make that, but I'm not really sure what is the best way to do them!!! Let me know what you think?? Thank so very much!

KARYN'S MEATBALLS

1 kg (1 lb) lean mince (hamburger)
large bunch of parsley, chopped
1 cup Parmesan cheese, shredded
1/2 cup Romano cheese, shredded
1 large egg
sea salt
cracked pepper

Combine all ingredients in a bowl. Shape into small meatballs and place in an ovenproof dish. Pour a large can of good quality tomato soup over the top.
Cover and cook in a 180oC oven (about 350F) for 30 mins. Remove, cover and cook for a further 5/10 mins.

Serve with a fresh green salad and crusty bread.

Broiled Italian Meatballs
Ingredients
1 large onion
1 poung ground round
1/3 cup plain dry bread crumbs
1/3 cup grated Parmesan cheese
1/3 cup evaporated skim milk
1 egg
1-1/2 tsp dried Italian herb seasoning
1 tsp garlic powder
1/2 tsp salt
1/2 tsp ground black pepper
vegetable oil spray


Instructions
Peel and chop onion. In medium bowl, combine chopped onion, ground round, bread crumbs, Parmesan cheese, milk, egg, Italian herb seasoning, garlic powder, salt, and pepper. With clean, dry hands, thoroughly mix together all the ingredients. Rinse your hands with water, but do not dry them. With wet hands, form mixture into 15 meatballs by rolling the meat mixture between the palms of your hands. Each meatball should be about 1-3/4 inches in diameter.

When you're finished rolling the meatballs, wash and dry your hands. Place oven rack 7 inches from broiler. If using broiler pan, remove it from the broiler. Preheat broiler. Spray broiler pan or baking pan with vegetable oil spray. (Make sure you are far away from the broiler while spraying.) Arrange meatballs in sprayed pan in 3 rows, 5 meatballs per row. Place pan on oven rack. Broil meatballs for 5 minutes. Using oven mitts, remove pan from broiler. With tongs, turn meatballs over. Return pan to broiler. Broil 5 minutes longer. Using oven mitts, remove pan from broiler.

Eat as is or add to spaghetti sauce, soups, stews or casseroles

I personally just take my meat and in it mix an egg, italian breadcrumbs, salt and pepper, parmesan cheese, and I add a little of the spaghetti sauce into them. I roll them into balls and put them in the oven or fry them up and then trun down low and pout spaghetti sauce over them and let them simmer.

If you want you can buy Barilla Spaghetti Sauce in a jar.

Meatball recipe
1 1/2 lbs of Ground Beef (90 % fat free) Do not buy ground chuck as it is too greasy and fatty
2 eggs
1/2 Cup of Grated Romano Cheese (this can be purchased in an Italian Deli) or at most grocery stores
at their deli counter
1/2 Cup of Chopped Fresh Parsley
3 Cloves of Fresh Garlic Chopped Fine
1/2 Cup of Flavored Breadcrumbs or more (like Progresso)
Salt and Pepper to taste

In a bowl add meat, eggs and all the ingredients and mix well with clean washed hands. If you need a little more breadcrumbs to make consistency better, then add a little at a time. When mixed well, start making the meatballs rolling them. Now there are two ways to cook them..the microwave or fry them. It is your choice. I microwave them now and it is so easy. Microwave approx. 5 minutes. But if you want them fried, fry them browned on each side and set aside on a paper towel to drain. Place them in the spaghetti sauce. If you really want a wonderful authentic Italian sauce, then add some pork meat, such as country ribs, or italian sausage. Microwave pork before adding to sauce. It gives the sauce a sweet taste.

Sauce from Scratch
2 large cans of Redpack Italian Plum Tomatoes or any authentic Italian tomatoes in store.
1 Can of Tomato Paste
1/3 Cup of chopped Fresh Basil
3 to 4 tbs of Olive Oil
3 to 4 cloves of fresh garlic minced
2 tbs of sugar
Ground Pepper

In the food processor, pulverize the plum tomatoes till almost smooth, leaving some small chunks. Then in a large saucepan add olive oil and heat then add garlic and simmer till golden (do not burn). Then add tomato paste and plum tomatoes..add pepper, basil, sugar and simmer for at least 2 hours. On the beginning of second hour then add all your meat and simmer one hour more. In two hours flat you will have the best spaghetti sauce and meatballs you have ever eaten in your life. Serve with a big salad and fruit for dessert. Enjoy.
