Is there hope for my over-heated brie?!

Question:

Is there hope for my over-heated brie?

I was making a receipe for baked brie topped with brown sugar and almonds; after 20 minutes in the oven (NO, I didn't check on it), I now have SOUP, rather than the softened cheese I'd expected.

Is it going to be gross? Will it re-set? Or should I just cut my losses and start over?

Answers:
I say give it a try. Brie and Camembert aren't cheap so I wouldn't toss it without a taste. Personally the melted cheese sounds good; since Brie is mild, the sugar and almonds should blend well. Try it on a firm bread (like sourdough) with a light spread of butter (just drizzle the cheese on the bread), or try it with crackers. Good luck!

unfortunately it's not going to be the same if it re-sets... better to just count the loss and start over! sorry though!!! I do the same darn thing all the time! :)
