EASY LEMON DESSERT

2 eggs, beaten
juice of 1 1/2 lemons
1 cup sugar
1 cup whipping cream
1/2 cup graham cracker crumbs

Combine ingredients and cook in a double boiler until thick. Allow to cool. Whip 1 cup cream. Fold into the lemon mixture.
Cover a shallow square glass pan with graham cracker crumbs, or alternatively, use a glass pie dish. Spread the lemon custard mixture on top.

Refrigerate until ready to serve. Cut into squares if a square pan was used, or wedges if served from a pie dish.

This recipe has been a Summertime favorite which has been in our family for over 60 years.

Variation: These can be served in custard cups for individual servings.


QUICK AND EASY CHOCOLATE DESSERT

1 box chocolate cake mix
2 4oz boxes chocolate instant pudding
1 can cherry pie filling
2 sm. tubs coolwhip

Prepare cake mix according to directions on box in a 13x9 pan. Let cake completely cool. (Best if made night before.) Prepare pudding and chill until set.
Cut cake into 2x2 squares. In large dessert bowl, starting with cake squares, layer cake...pudding...cherry pie filling...whipped cream and repeat.

ENJOY!!! Can also use different variations. (ex...white cake, vanilla pudding, fresh blueberries and strawberries~ good for the 4th of July

EASY DESSERT

1 can lemon pie filling (Thank You brand)
1 lg. can crushed pineapple, use juice
1 can miniature marshmallows
1 can Eagle Brand milk

Mix together, then fold in 1 large Cool Whip. Chill. This is a quick, easy, delicious dessert.

really all depends on what you are looking for. I was looking at doing something simple before, and I got a fondue set, and did chocolate fondue with freshly cut fruit to dip it in! It was awesome... :) But there are TONS of receipes for stuff like that on TLC.com or foodnetwork.com. They rate the difficulty level and you can search based on ingredients!!

This time of year strawberry shortcake is a nice simple dessert. Take two pints of fresh berries and wash them, stem them and cut in half, add about 1/2 cup of sugar and stir- store in fridge for two to three hours. While you are buying the strawberries also buy a ready made angel food cake. Slice into generous wedges, place berries and some of the juice that will have formed over the cake slice and add whipped topping or whipped cream from a can and serve. Quite yummy and easy.

Ice cream with a sauce of some sort. Fruit. Prepared cake (like pound cake with fruit) and whipped cream. Parfaits -- layer pudding, cake, fruit and whipped cream or sweetened cream cheese, caramel or chocolate syrup -- easy and elegant!

1 cup Your favorite yogurt
1 tub cool whip
1 Graham cracker pie crust

whip yogurt and cool whip add to pie crust mix and match your flavors. Health too. let stand in fridge for an hour

Its so easy and no messy cleanups! Ive made the cookies before....Chocolate cake mix with peanut butter chips, butter flavor cake mix with chocolate chips, strawberry flavor cake mix with white chocolate chips....you could create your own flavors....

Fruit tarts. Can of crescent rolls divided into squares. Take any fruit pie filling, mix with 1/2 cup of cream cheese. Fill squares with mixture, fold opposite corners together, bake as directed on crescent roll directions.

the easiest one that i know of is Rice Kripies and a jar or mashmellow topping. Mix and spread into a pan.

here is one of my favorites.

in a large bowl combie
1(1-lb) bot powdered surgar (3 1/2 cups)
12 tablespoons melted butter
2 cups (18 oz) peanut butter
3 cups Rice krispies
------------------------------...
I add the following which isn't part of the recipe
1/2 cup maple suryp
1 tablespoon vanilla extract
------------------------------...
melt together
8 oz ( 1 1/4 cup milk chocolate chips
8 oz semisweet chocolate chips
any combination of chips works here

in a 11"x17" lightly buttered pan smooth out the peanut better mix
cover with melted chocolate.
cool in refrigerator, and cut into bars.
you can also use a cupcake pan for this too.

The easiest desserts are
- fresh fruit, sprinkled with some kind of sugar or syrup, and possibly topped with cream (whipped cream, ice cream, plain cream)
- a liqueur, sweet sherry or port
- nuts and cheese
- all of the above

Chocoate dipped strawberries. Melt a bag of chocolate chips in a bowl in the microwave. Dip fresh strawberries in the chocolate, lay them on wax paper on a cookie sheet. Place in fridge till they set.
Note: Make sure the strawberries are thoroughly dried before dipping them.
Also, if chocolate gets too stiff before all the strawberries are dipped, then re-heat it in the microwave.

A Fruit Trifle is delicious, easy, and can be varied to suit your own individual taste:

Ingredients:

2 premade angel food cakes or pound cakes, cubed
1 large carton Cool Whip
2 packages frozen fruit of your choice (peaches, blackberries, raspberries, or strawberries make great trifle!)
Chocolate curls, whole berries, or mint leaves for garnish (optional)

In your prettiest large glass bowl, place a layer of cake cubes. Top with a layer of thawed fruit, and spread a thin layer of Cool Whip over the fruit.

Repeat until the bowl is full, ending with a layer of Cool Whip. Garnish with chocolate curls or whole berries and mint leaves if desired.

I box of Strawberry Jello (or whatever flavor you want)

I tub of cool whip

about 10 strawberries (or whatever other fruit you want)

-follow directions on box of jello
-Mix jello with cool whip
-cut about 7 strawberries in small pieces put in jello mix
-cut the other 3 straight across the strawberry (like a circle, not chunks) and put on top of jello
-put in fridge let sit about 2-4 hrs.

You can use as many strawberries as you want.

I just made this tonight still chilling, very good fast, low fat desert!

Take a pre-made graham cracker pie crust, chocolate preferably. Add chocolate pudding, a layer of m&m's, some whipped cream and in=mprovise the rest....try marzipan, marshmallows, two tyes ofpudding, fruit, you get teh idea. So easy and fun for making with the kids!

This really looks nice in a glass pyrex dish or a trifle bowl.

Death by Chocolate
1 box chocolate cake mix
4 sm boxes of Instant Choc. pudding
4- 8-oz. cool Whip
* oreo cookies crumbs (optional)
* melted chocolate (optional)
* chopped heath bars (optional)
* chocolate chips (optional)

Bake cake according to directions.
and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake - crumbled
half the pudding ( 2 boxes prepared)
16 oz. cool whip
Repeat
* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips.

Butterscotch Pudding
"This recipe is good as pudding or as pie filling!"

INGREDIENTS
* 1 cup dark brown sugar
* 3/8 cup cornstarch
* 1/2 teaspoon salt
* 2 eggs, beaten
* 2 cups milk
* 1 teaspoon vanilla extract
* 1/4 cup butter

DIRECTIONS
1. In a 1 quart saucepan, stir together sugar, cornstarch and salt. Place over medium-low heat and stir in eggs and milk. Cook, stirring, until mixture thickens enough to coat the back of a metal spoon. Stir in vanilla and butter. Let cool briefly and serve warm, or chill in refrigerator until serving.
