ENCHILADA SAUCE

1 can (28 oz.) enchilada or red chile sauce
1 can water, same as above
1 1/2 c. of shortening
1 1/2 tsp. salt
1 tsp. cuminos (heaping) or ground cumin seed
1/4 tsp. oregano
1/8 tsp. pepper
2 c. flour
1/4 tsp. garlic powder

In one pan put flour, salt, cuminos, oregano, garlic and pepper. In separate pan melt shortening until it smokes. In another pan pour enchilada or red chile sauce and water. Use medium heat. Cook until enchilada sauce starts to boil. When enchilada sauce begins to boil and shortening starts to smoke, pour shortening into flour mixture. Stir until flour mixture makes a paste. Add this to enchilada sauce. Use hand beater (low speed). Simmer about 20 minutes longer. Stir frequently. Can be frozen for future use. Will thicken after it sets. Use a little water to thin to your taste.

To make an Authentic style red enchilada sauce use the red chili pods. To make, brake off the stems and take out all the seeds. Then you soak the pods for about 20 to 30 minutes. While the pods are soaking, prepare chopped onions, and chopped garlic (one clove), and one pound ground beef. Cook the ground beef with the onions and garlic in a good size stew pot. Once the beef is browned take off the heat and add a heaping half cup of all purpose flour, don't drain the meat just add the flour, this will make the base for the sauce. A blender or food processor is needed for the next step, take the pods that have been soaking and place them into the blender along with the liquid and puree until smooth. You can heat up the pods before you blend which tends to release more flavor. Add the pureed chili pods to the beef pot and simmer to a boil, stirring often. If it is too thick, add some more of the water that the chili pods were soaking in or if too thin, take the same chili pod water with some corn starch and add until thickened. Garlic salt finishes the enchilada sauce. Enjoy!

P.S.
You can use the red chili powder, but you get a better taste from the pods. Plus, the color from the pods is so earthy red, something that could not be obtained from powdered chili.
