I would like to find a course if possible but a good book with an easy to follow guide would be good too.

go to your local Italian Deli.. or on-line?.. library.. always have good books.. that you don't have to buy,, just copy the pages on your printer.. on good recipes the easy ones or the ones you like

I also like you wanted to make my own Sausages at home, I found a book called Home Sausage Making, written by an American, I will get the ISBN No and the name of the author, it is a great hobby and very rewarding
