What's your best houmous recipe and what do you serve it with?
Answers:
2 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
a 16- to 19-ounce can chick-peas, rinsed and drained
1/3 cup well-stirred tahini (sesame seed paste)
3-4 tablespoons fresh lemon juice
4 tablespoons olive oil
1 teaspoon ground cumin
In a small food processor blend together garlic paste, chick-peas, tahini, lemon juice, oil, and cumin, scraping down side, until smooth. If too thick, add a little water. Add salt to taste.
Serve with baked pita chips, or raw carrots and red bell peppers.

INGREDIENTS:
1 can chickpeas/garbanzo beans (15 oz.)
2 tablespoons roasted garlic
1/2 tablespoon lemon juice
1 tablespoon olive oil
1/2 teaspoon oregano
PREPARATION:
In a food processor, process beans, garlic, olive oil, lemon juice and oregano until desired consistency. If hummus is too thick, simply add olive oil in small increments(i/2 teaspoon) until desired consistency
Serve roasted garlic hummus garnished with finely chopped parsley with hot pita bread, pita chips, or veggies.
I serve it with pitta bread and salad.

Hummus is tricky, don't ever follow a recipe exactly. You need to constantly test it for flavor balance.
My basic recipe:
1 can of drained chickpeas (juice reserved)
2-3 cloves of fresh garlic
2-3 tbs tahini
about 1tbs salt
about 2 tbs olive oil
Juice from about 1/2 lemon
Put all in blender, if mixture is too thick, add some of the juice from the bean can.
The key with hummus is to have it flavorful enough so that you can taste all the flavors, but still have balance and a creamy texture.
Oh, and i use it as a sandwich spread on pita or whole wheat toast with cucumbers and sprouts.
I learned from my Isreali boyfriend to spread it on bread and top with a fried egg.
It is also good garnished with spicy paprika and served with raw carrots, celery and cucumbers.
i eat it with pitta bread and gherkins like a sandwich if you know what i mean!
HUMMUS
1 lg. onion, minced
1 to 2 cloves garlic
1 tbsp. vegetable oil
2 c. chickpeas (garbanzos), drained & rinsed if canned
1/2 c. fresh lemon juice
1 tbsp. reduced-sodium soy sauce
1/4 c. tahini (sesame paste)
1/2 c. sesame seeds, toasted & ground
Saute onion and garlic in oil until vegetables are soft. Set aside. In blender or food processor puree the chickpeas with the onion, garlic, lemon juice, soy sauce, tahini and sesame seeds.
Serve hummus with pita bread, fresh or toasted, and (or) as a dip for fresh vegetables.
