I like curry with fruit... it's sweet and spicey. First saute any firm fruit in a bit of oil, I usually use peeled apples, raisins, dried cranberries. Don't cook it so long that the apples get mushy. Remove from skillet and add your meat or fish [shrimp is good] saute until just done. Cut your heat to low and add your curry powder. Buy the commercial mix powder the first few times you make curry, it's easier. Don't add too much, or to the skillet while on high saute because it gets bitter. I find a tea. of powder to 3to4 servings plenty. Toss it with the meat and add your fruit back to the skillet. Add salt to taste and if you like, shredded coconut [found in the baking aisle]. Allow to sit covered for a few minutes before serving with rice or alone in a bowl. I usually cut everything in bite size pieces before cooking. If you cut your fruit first, you won't have to clean your cutting board twice.
