if i have frozen, skinless chicken breasts can I simmer them in some chicken broth to make moist chicken?
Answers:
Do not let the broth come to a boil and cook the chicken breast slow. Season as you like. This is poached chicken and you will not get any more moist that this way. You can take the chicken from the broth that you started with and if you seasoned the broth you can add a cornstarch and water slurry to make a light glaze for the breast.
You can , because when chicken is frozen it has a tendancy to lose moisture and taste.
If you don't have time to defrost, sure. Or you can just drop in boiling water and season later.Just don't over cook. 25 minutes in boiling water should do it. Make sure the breasts are cooked thru - no pink centers.

Yes, it'll help a bit, as long as you don't cook them to death. Be gentle with the simmer and declare them done at the first possible second of done-ness.
However, it still won't be as tasty as chicken with both skin and bone -- sorry, but that's the truth.
You can do anything you want with them- but I would suggest thawing them out completely first--then you can cook them in evoo and garlic and butter or chicken stock--once they are completely thawed out they are as good as fresh.

Chicken breast require dry heat cooking methods to produce the most succulance, which is still not going to be much because they're TOO low in fat.
The dark meat is the type of meat that takes well to wet heat cooking methods.
