I need some recipes using tomatoes...?!


Question:

I need some recipes using tomatoes...?

I bought some green tomatoes at our farmers market, but I waited too long to use them and they are red. Does anyone have any suggestions on what I can use them for? I have about 10 of them, and I want to try some different recipes.


Answers:
If they are big enough, you can cut out the guts of them and use them like you would a pepper and stuff them with all kinds of goodies.............sausage, onion, garlic, grated cheese and bread crumbs all sauted first in evoo and then stuffed in the tomato and baked.

macaroni and cheese--yeah it's good---make your own home made elbow noodles with cheese and then stuff in the tomato and bake until the tomato is soft-- about 35 minutes

rice and ground beef- like a stuffed pepper

use your imagination- they are great stuffed

or you can just saute chopped tomatoes in evoo, garlic, salt, pepper, a little fresh basil and oregano and it turns into a tastey stewed tomato

make a nice rich tomato pasta sauce

Tomato-mozzarella salad is delicious!

3 large tomatoes, sliced
8 ounces mozzarella cheese, sliced
1/2 cup finely diced red onion
1/4 cup olive or vegetable oil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup minced fresh basil

DIRECTIONS

On a large serving platter, alternate tomatoes and mozzarella slices, then sprinkle with diced red onion.

In a jar with a tight-fitting lid, combine the oil, salt and pepper; shake well. Drizzle over tomatoes and mozzarella. Sprinkle with basil.

Serve with French bread or bread sticks.

Alternate method:

Peel, seed, and dice the tomatoes. Cut the mozzarella into cubes. Mix together with the diced red onion.

Mix together the dressing ingredients, and pour over the tomato mixture. Toss well, and refrigerate.

ok get a pound of hamburger meat and cook that then cook some macarroni pasta and when that is done add them together cut up one or two of the tomatos then get a little can of tomato sause and add it all to gether it is sooooooooooo good

BOCCONCINI (MOZZARELLA) AND TOMATO
SALAD

This is a true Summertime salad because it is best made with garden-fresh, ripe ingredients. The riper the tomatoes, the better; and only fresh basil leaves will do. Use your best quality, fruit olive oil for this one.

Vinaigrette:

1/3 cup extra virgin olive oil
3-4 tablespoons balsamic vinegar
1 tablespoon fresh basil, chopped
1/2 teaspoon fresh oregano, or 1/4 teaspoon dry
1/4 teaspoon sea salt
pinch of red pepper flakes
3 garlic cloves, finely minced


Salad:

2 tablespoons pitted black oil cure olive, chopped
1/2 lb small mozzarella balls (Bocconcini)
5 ripe tomatoes, cut into 1" thick wedges

Allow the minced garlic to stand in the vinegar for 10-15 minutes before preparing recipe. This will help remove the "bite" from the garlic and mellow it.
Meanwhile, slice tomatoes into wedges. Drain mozzarella balls (they are normally packaged in a brine). Remove pits from black olives and coarsely chop. Set these ingredients aside in a salad bowl.

Combine vinaigrette ingredients in a cruet or in a blender with the garlic and vinegar from above. Use 4 tablespoons vinegar if you like a tangy salad (3 tablespoons if you don't). You can use all balsamic vinegar, or if you prefer a milder dressing, use half balsamic and half red wine or Chianti vinegar. No mincing or chopping is required if a blender is used - pulse briefly.

Pour vinaigrette over tomatoes, cheese and olives; stir to coat. Do not add too much dressing - just enough.

Can be served with peeled, sliced cucumbers (1/4" coins or 1/2" cubes), if desired.

Season to taste with freshly grated black pepper (and salt, if needed) and serve, optionally, on a bed of radicchio or escarole hearts.

Bruschetta

Ingredients:
6 slices crusty Italian bread, halved
crosswise
3 lg. garlic clove, crushed and minced
4 tbsp. extra virgin olive oil
6 lg. firm ripe tomatoes, peeled,
seeded and chopped
Salt and pepper
1/4 c. minced fresh basil leaves (or a palmful of dried basil)
1 tbsp. balsamic vinegar, or to taste

Directions:
Preheat the broiler. Arrange the slices of bread on a baking sheet and broil 5 inches from the heat until lightly browned. Turn and brown the other side. In a small bowl, combine the garlic, and 3 tablespoon of the olive oil, and brush the mixture on one side of the bread slices. In a skillet, heat the remaining 1 tablespoon of oil over medium heat, add the tomatoes and salt the tomatoes are just heated through. Stir in the basil and vinegar. Top the toasted slices with the tomato mixture. Serves 6.

You can also bake a small wheel of brie cheese for 15 minutes until soft, serve it alongside the bread and people can spread it on the bread before adding adding their own tomato mixture.

This nice summer recipe is real simple:

2 large tomatoes, each cut into 6 slices
6 oz. Mozzarella Cheese, cut into 6 slices
1/3 cup Italian Dressing, divided
6 slices red onion (about 1 large)
12 seedless cucumber slices (about 1 medium)
6 fresh basil leaves

~Place 6 of the tomato slices on platter; top each with 1 cheese slice. Drizzle with half of the dressing.
~Top each with 1 onion slice, 2 cucumber slices and second tomato slice.
~Drizzle with remaining dressing; top with basil leaf. (Basil for presentation mostly)

Another nice way to use them up is make a pasta salad (cooked rotini, italian dressing, diced tomatoes, and whatever vegetables you have in your fridge).

Make salsa! Or BLT's (bacon, lettuce,tomato sandwiches). How about Bruschetta.

slice and put on sandwiches, put in salads, make salsa (dice tomato, onion, garlic, fresh jalapeno w/out seeds, and a dash of oregano, salt and pepper.) add avacado to your homemade salsa with a dash of fresh lime juice and it will be the best guacamole you will ever eat.

ripe tomatoes are great on pizza instead of sauce, much fresher tasting.

a great simple salad is just cucumber and tomato with a little salt and pepper. doesnt need a dressing bc the juice from the tomato with salt and pepper make it perfect.

I also like to eat just tomato with a little salt.....tastes like summer.

use tomatoes to top any pasta dish, or make a pasta salad with tomatoes and black olives.

put em with meat, onion, bell pepper and mushroom on shish kabobs.

the possibilites are endless.

make salsa!
you can serve this with chips and guac or it it on raw veggies instead of dip. I tend to make this a day ahead to let the flavors meld. I don't have exact measurements, but you can make to taste, just add to a bowl and mix:
fresh tomatoes, lightly seeded and diced, you can char them on the stove top/gas grill for a smoky flavor, just peel away any black on the skin
a little bit of onion,red or white, finely diced
couple cloves garlic
cilantro
squeeze of lime
one or 2 jalapenos, depending on how spicy you want it (take the seeds out if you don't want it too spicy) finely diced (these also can be charred like tomatoes)
salt and pepper to taste

or if you want a mango salsa (you can also use pinapple, or add papaya) try it on grilled whitefish like halibut-it's delish!
diced mango
diced tomato
diced red onion
lime juice
jalapeno
salt and pepper

SPAGHETTI WITH TOMATO SAUCE

1 clove garlic, cut into sm. pieces
3 tbsp. olive oil
1 sm. onion, chopped
2 cans tomato sauce
1 tsp. salt
1 tsp. sugar
1 tsp. pepper
1 lb. spaghetti
Romano cheese
3 quart saucepan

Cook garlic and onion in oil until brown. Stir in tomato sauce. Add salt, pepper and sugar. Cook on low heat. Simmer, stirring frequently until sauce is thickened, about 40 minutes. Cook spaghetti. Serve sauce over hot spaghetti and top with Romano cheese.
