Any good and easy way to cook potatoes?

Gratin Potatoes:
Using a baking dish, distribute sliced potatoes in a layer followed by a layer of shredded cheese. Repeat untill the dish is full. Fill the dish halfway with milk. Cover the dish with aluminum foil (just to keep it from boiling over and leaving a mess in your oven). Cook at about 350° for an hour, stirring every ten or fifteen minutes. Let cool for 20 mins.
Rosemary Potatoes:
Use small red potatoes. Preheat the oven to about 300°. Wash potatoes and cut in half. Coat the bottom of a baking dish with a thin layer of olive oil followed by a sprinkle of rosemary. Evenly distribute the potato halves in a single layer in the dish. Sprinkle a light layer of olive oil over the potatoes, and a generous amount of rosemary. Put in the oven to cook for 20-30 mins. Turn potatoes over after about 10-15 mins. Watch them closely to make sure they don't burn. Cook untill golden brown.
BAKED POTATOES SUPREME
2 large Idaho potatoes, baked
1 egg, hard cooked, peeled, and grated coarsely
4 cups broccoli, chopped (optional)
1/2 cup grated mozzarella cheese (reserve a few spoonfuls for topping)
4 strips bacon, sautéed and crumbled or chopped
4 teaspoons butter (2 for each potato)
1/4 cup sour cream
1/3 teaspoon each salt and pepper
Wash and cut up broccoli (optional), set aside.
Scrub potatoes, then rub with a small amount of vegetable, peanut or olive oil. Cook in microwave until fork tender, about 10 minutes, depending on size of potatoes and wattage of your oven.
While potatoes are cooking, steam or simmer broccoli until just tender but still crisp. When broccoli becomes a bright green, drain, remove from heat and return to pan with cover briefly to finish cooking. If broccoli becomes an olive green, it's overcooked.
Cut an oval circle from top of potatoes and scoop out meat while still hot. In a small bowl, mash together with cheese, bacon, and sour cream and butter and coarsely chopped egg. Season with salt and pepper to taste. Return mixture to potatoes.
Top with remaining cheese and broil 5 minutes more, garnish with fresh herbs and serve.
Variations: Add 1-2 tablespoons chopped fresh chives, dill, or rosemary. Use olive oil instead of butter. Use onion dip instead of sour cream. Use Parmesan cheese instead of mozzarella. Substitute Serrano ham or prosciutto for bacon.
Peel, cut into 8ths & boil them in water with Tumeric.
Bake is the easiest. You can boil and mash or eat whole, shred and fry, hash and fry, make into sticks and deep fry, boil - chop and make into potato salad, mash and make into potato patties.

if you are using the small red or yellow potatoes you can boil them with the skin on until they are fork tender, and then toss them around with butter or olive oil, salt, pepper, garlic and herbs (i like chives and parsley, but you can also use dill) and serve them up.
or you can use larger red potatoes or brown potatoes and cut them in quarters or like fries and toss them with the same ingredients except use garlic powder, put them on a sheet pan and bake them in a 400 degree oven until brown and tender
or you could peel and boil potatoes and mash them up with garlic, butter, salt, pepper, and cream (or milk) and stir in baby spinach and have spinach mashed potatoes
- Wash the potatoes, do not peel.
- Slice full length in wall mounted French fry potato slicer.
- Rinse potatoes in cold water, cover with water until ready to use.
- Fry potatoes for approximately 1 + 1/2inutes in canola oil.
- Lift fryer basket and hold semi-fried potatoes to cook to order.
- Again drop potatoes into the oil and fry for approximately 2 more minutes or until golden brown.
- Drain.
- Toss in a blend of paprika, salt, cumin, white pepper and cayenne.
Baked Potatoe (in Microwave)
Pierce potatoe with fork about 4 times. Place in microwave and cook on high 7 -8 mins. Remove and cut a "cross" shape at the top and squeeze so as to open it up. Top with garlic butter, coleslaw and sour cream. Other options - add bacon pieces and chives. Or just top with baked beans and cheese.
Baked Hash Browns
2-1/2 pounds frozen hash browns, thawed out
2 cups sour cream
2-1/2 cups shredded cheddar cheese
? stick melted butter
? cup finely chopped onions
2 cans cream of mushrooms soup
salt and white pepper to taste
Mix all ingredients in a large bowl. Place in a 13x9x2-inch baking dish.
Cover with foil and bake at 325 degrees for 2-1/2 hours.
Stir after first hour.
Remove foil for last 20 minutes or so.
Makes 8 servings without doubling.
Mashed Potatoes
This dish can be made the day before, and baked before serving.
5 pounds Yukon Gold potatoes, cubed
2 (3 ounce) packages cream cheese
8 ounces sour cream
1/2 cup milk
2 teaspoons onion salt
ground black pepper to taste
Preheat the oven to 325 degrees F (165 degrees C).
Place potatoes in a large pot of lightly salted water. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash.
In a large bowl, mix mashed potatoes, cream cheese, sour cream, milk, onion salt, and pepper. Transfer to a large casserole dish.
Cover, and bake for 50 minutes in the preheated oven.
This is a family recipe that is absolutely deliscious!!!! I don't know exact measurement but once you have them you never go back. You MAY find these tacos deep in Guadalajara Mexico but they are being lost through time so give 'em a try. VERY EASY!!!!
POOR MAN TACOS
4 large potatos
Cracked pepper to taste
Kosher salt to taste
Jack cheese to taste
Corn tortillas
vegetable oil to fry tacos
cabbage
(You can add shredded chicken if you'd like)
Boil the potatos until fork tender. Remove and peel. Add pepper and salt and cheese when hot. Mash until smooth as if making mash potatos. You can leave some lumpt for texture. If adding chicken do not add yet. Slice up small pieces of the Jack Cheese ( I use queso fresco but Jack Cheese is ok)
To assemble
wamb tortillas in the microwave until soft and pliable. Keep in a tortilla warmer. Remove Tortilla and with large table spoon, spoon into tortilla right in the middle, add the slices at least two small slices of cheese and insert toothpick to keep closed and slowly place into pot of oil. If putting shredded chicken you will put in the chicken at the same time as the jack cheese. Repeat until all the mix is done.
You can either buy salsa or make your own
Chile de Arbol Salsa (Red Salsa)
1/2 pound Italian Roma tomatoes
3/4 pound tomatillos, husked and washed
1 cup (30 - 40) Arbol chiles
1/2 bunch cilantro, leaves only, roughly chopped
1 medium white onion, chopped
4 garlic cloves, crushed
2 cups water
1 teaspoon salt
1/2 teaspoon ground black pepper
1/3 cup of parmesan cheese
Preheat broiler. Place tomatoes and tomatillos on a baking sheet. Broil, turning occasionally until charred all over, 10 to 12 minutes. Transfer to a saucepan. Add the remaining ingredients.
Bring to a boil and cook until onions are soft, 12 to 15 minutes. Transfer to a food processor or blender. Puree and then strain. Serve at room temperature or slightly chilled. Arbol Salsa can be stored in the refrigerator 3 to 5 days, or frozen for weeks.
Once all fried and done serve taco with shredded cabbage
inside and salsa.

Potato Pancakes/Patty's
Peel &Grate 3 large potatoes
Grate 1 medium onion
Pinch pepper n salt
1 Tab plain flour
1 Egg
Mix all together,place spoonful into hot oil in frypan for each patty then turn over when browned up and crispy and so forth..
This makes quite a few depending on how large of small you make them..
Serve with salad with tomato ketchup Yummo ?
