GHEE BARFI - what is it & does any1 have a recepie,?

i have never been to india but my brother recently went to india for work and bought back what he was told was ghee barfi, i am in love with it but i dono how to make it, can some one please help me

BURFI

Seeds of 4-5 Small Cardamoms (Choti Illaichi)
4 cups of Powdered Milk
2 cups of Sugar
2 tbsp. of Clarified Butter (Ghee) or Cooking Oil
Evaporated Milk
? cup of Water


1) In the powdered milk add enough evaporated milk to knead it into a hard dough. Roll it up into a hard ball and keep it in the freezer for 15-20 minutes.

2) Then take it out and grate it with a corase grater. In a pot heat the oil and add the illaichi seeds, grated milk, sugar and water and cook on low heat and keep stirring till the water has dried and it starts to come together and leaves the sides of the pot.

3) Add a few drops of kevera essence(optional) and set in a flat dish. When cool cut into pieces.



COCONUT BURFI - Do not add water. Add grated coconut according to taste and yellow food color.

PISTA BURFI - Add chopped pista according to taste and green food color.

I've never heard of the ghee variety, but the coconut barfi is delicious. I haven't heard of it in years, thanks for the recipe, duchess.

500g full cream powdered milk
3/4 cup ghee*
1/4 cup liquid milk
2 cups caster sugar
1/2 cup water

*ghee can get at any Indian shop- ghee(butter without salt) made from cows milk.

1) crease a tray or a plate with thin film of ghee.
2) mix ghee & liquid milk to powered milk, make a hard
dough, & grate the dough in a colander, it would appear
as tiny grainy balls.

3) in a large saucepan start boiling sugar & 1/2 cup water
stir, to dissolve the sugar.( about 5-8 mins to boil).

4) to check if the syurp is ready then pour a drop on a dry
saucer or plate, the drop should look like "pearl drop",
even if you shake the saucer it should run. Now its ready,
off the stove.

5) ready to mix, all the milk mixture.
pour the mixture on the crease tray. not very long you can
cut in cubes or square.

6) Please do let me known, how it turn out.

can also add 1 cup of desiccated coconut
