Stuffed Chicken Breast

INGREDIENTS:
6 boneless chicken breast halves
1 tablespoon vegetable oil
1 tablespoon butter
1 medium onion, sliced
4 ounces sliced mushrooms
1 rib celery, thinly sliced
1 egg, beaten
1 tablespoon chopped fresh parsley
2 tablespoons fine dry breadcrumbs
2 teaspoons grated parmesan cheese
3/4 cup shredded mozzarella cheese
salt and pepper
1 can (10 1/2 ounces) condensed tomato soup
1/2 cup water
1/2 teaspoon leaf basil, crumbled

Place chicken pieces between sheets of plastic wax; gently pound with a meat mallet to flatten evenly. Be careful not to tear or break through.
In a large skillet, heat vegetable oil and butter; sauté onion slices, mushrooms, and celery until tender.
Add egg, parsley, bread crumbs, Parmesan cheese, and mozzarella cheese. Stir to blend well.
Sprinkle chicken breasts with salt and pepper; fill with even portions of the filling mixture. Roll up and secure with toothpicks. Arrange chicken breasts in a shallow 3-quart baking dish, spooning any extra filling around the chicken rolls. Mix soup with 1/2 cup water and the basil; pour over chicken.
Bake at 350°, basting occasionally with sauce in the baking dish, for 1 hour. Remove toothpicks and serve with rice or potatoes. Serves 4 to 6.

This is sooooooooooo good!

Carmelized Garlic Chicken

3 t olive oil
6 cloves of garlic, minced or pressed
6 t brown sugar
6 boneless, skinless chicken breast halves

Heat oven to 500 degrees F. Heat oil in medium-LOW pan. Add garlic and cook 1 or 2 minutes until soft. Take off heat and add brown sugar. Stir to mix. Line a baking pan with foil and "Pam" the heck out of it. Pat dry the chicken and place in pan. Spread the garlic mix over the chicken. (No, it won't cover the entire thing, it doesn't need to.) Bake for 10-15 min.

Good luck.

Sweet sausage pesto pasta is delicious (I just made up the name though.) Its just a box of your favorite pasta, a jar of pesto, sweet italian sausage cut into slices (or whatever sausage you prefer) and fresh mozzarella. Its simple too - boil the pasta, fry the cut sausage in a light oil, then combine the sausage with the pasta and the pesto. Last, after its all mixed up, add fresh mozzarella (in chunks about the size of large peas - any larger and they all stick together.)

I'm generally not a very good cook - but this is simple and SO tasty.
