How do i make gnocchi look presentable?
i make sue to flour everything but the dough ends up sticking to the knife and they look deformed - any suggestions?

cool the dough in the fridge for about an hour or so first.

Cut into 1/2 inch lengths, flattening each slightly, and
denting the center of each with your index finger's knuckle. Drop into
a big pot of boiling water and let boil for about eight minutes.
keep the dough with enough flour so it wont stick
Dress it up, as long as it tastes good and you can cover the flaws, it's really ok
GNOCCHI AND BROCCOLI
1 lg. head broccoli
2 lbs. gnocchi
1 med. onion, chopped
1 lb. bacon
1 1/2 sticks butter
Garlic salt
Chop broccoli into small pieces; boil until tender. Cook gnocchi in boiling water according to package directions until tender. Cut bacon into small pieces and fry until crisp. Cook chopped onion until brown. Mix all ingredients; add garlic salt to taste. Serves 8.
the trick is to hold a fork on the board so the tip of the tongs are resting on the board while you hold the fork up cut a piece of dough about the width of the fork lay the dough on the fork gently lay 2 fingers on the center of the dough and in one motion push 1/4 of the way into the dough and and roll it of the fork. this will give you the lines takes some practice
Make sure the potatoes are pretty hot when you start making the dough. Also, it sounds like you're overworking the dough. Try not to mix/knead the dough too much...just enough to incorporate all of the ingredients. Then you can use the back of a fork or if you have it one of those paddles that people use to make the textured butter balls to make the lines on the gnocchi.
