Lemon cake... with jell-o?

I remember when I was younger my step mom used to make an amazing lemon cake that was unbelievably moist... i faintly remember her poking holes on top and pouring on the hot instant jell-o mixture... does this sound right? does anyone know a similar recipe? or have their own great lemon cake?

JELLO CAKE

1 pkg. white cake mix ( or any flavor )
1 (3 oz.) pkg. Jello (strawberry, raspberry, lime, or lemon)
1 c. boiling water

Prepare cake mix as directed on package. Bake in 12 x 8 or 13 x 9 inch pan. Flour and grease well and place in 350 degrees oven for 25 to 30 minutes. Cool. Poke holes 1/2 inch apart ( it says to use a toothpick - but I use a fork). Do not remove from pan. Dissolve Jello in bowl with 1 cup boiling water. Pour Jello over cake. Chill 4 hours or longer until ready to serve. Top with Cool Whip.

Luscious Lemon Poke Cake

Prep Time: 30 min
Total Time: 4 hr 30 min
Makes: 16 servings, one slice each

2 baked round white cake layers (9-inch), cooled
2 cups boiling water
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Brand Lemon Flavor Gelatin
1 cup cold milk
1 pkg. (4-serving size) JELL-O Lemon Flavor Instant Pudding & Pie Filling
3 cups thawed COOL WHIP Whipped Topping

PLACE cake layers, top-sides up, in two clean 9-inch round cake pans. Pierce cakes with large fork at 1/2-inch intervals.
STIR boiling water into dry gelatin mix in medium bowl at least 2 min. until completely dissolved. Carefully pour evenly over cake layers. Refrigerate 3 hours.
POUR milk into large bowl. Add dry pudding mix. Beat with whisk 2 min. or until well blended. Gently stir in whipped topping; set aside. Dip one cake pan in warm water 10 sec.; unmold onto serving plate. Spread with about 1 cup of the pudding mixture. Unmold second cake layer; carefully place on first cake layer. Frost top and side of cake with remaining pudding mixture. Refrigerate at least 1 hour before serving. Store leftover cake in refrigerator.

Ah, childhood memories. Mine would make the same cake. It was always lemon cake with green/lime jell-o. After it chilled she'd top it with a zesty lemon icing. The above recipe sounds about right. She would always use the turkey baster to deliver the green jello into the cake. I hadn't thought about it since reading this. Thanks for sparking the neurons!

I love poke cake!!!!

Just make sure you refrigerate it overnight. It settles better and tastes better.
