Teriyaki tuna burger recipe?

I need a recipe for a teriyaki tuna burger and suggestions on where to go to buy the fish(Whole foods, local co-op, or what...). I live in a large costal city, so finding quality ingerdients shouldn't be a problem.

Traditional Japanese teriyaki sauce is made with the following ingredients...Soy sauce, Mirin (sweet rice wine), and Sake (rice wine). My favorite recipe for teriyaki sauce is 1 cup soy sauce, 1/2 cup water, 3-5 cloves of garlic (smashed), and an equal amount of chopped ginger. Mix all ingredients and let sit for about an hour then strain and mix with your tuna. You may need some kind of binder to hold the tuna in a burger form, maybe eggs. Also, you'll probably need to add just a touch of bread crumbs to the mixture to compensate for the teriyaki sauce.

ORIENTAL FISH TERIYAKI

1 lb. swordfish or tuna
1/4 c. orange juice
1/4 c. soy sauce
2 tbsp. ketchup
2 tbsp. oil
2 tbsp. chopped parsley
1 tbsp. lemon juice
1 clove garlic, minced
1/2 tsp. oregano
1/2 tsp. pepper

Combine all ingredients. Marinate fish at least 1/2 hour each side

TUNA BURGERS

1 c. tuna (co-op brand with water)
1/3 c. mayonnaise
2 pieces toast crumbled (Living Bread) sprouted wheat
3 tbsp. Frank's catsup
1 egg
Lemon juice
Salt
Pepper
Dill weed spice
Garlic powder
Onion powder
Celery and onion (chopped)
Dash of Tamari

Saute chopped onion and celery in small amount of vegetable. Mix all ingredients together. If burgers are too liquid, add more bread crumbs. Form into patties. Fry in skillet with small amount of oil.

/2 stalk green onion, cut into 1/2" strips BURGER 400 grams chicken meat, chopped or ground 100 grams onion, chopped 2 tbsp flour SAUCE 1 can (140 g) DEL MONTE Filipino Style Tomato Sauce 1/2 tsp ginger, grated 4 cloves garlic, minced (1 tbsp) 1/8 tsp pepper 2 tbsp soy sauce 1 tsp calamansi juice 1-1/2 tbsp brown sugar

Procedures:
1 COMBINE ingredients for sauce. Set aside. 2 COMBINE ingredients for burger with 3/4 tsp iodized fine salt (or 3/4 tbsp iodized rock salt) and 1/4 tsp pepper. Mix well. Divide into 8 then shape into patties. Brush with sauce. Grill in pan with 3 tbsp oil while basting with sauce until just cooked. Simmer remaining sauce for 1 minute. Pour over burgers. Top with green onions.

INGREDIENTS:
1 pound ground turkey, uncooked
1/2 cup breadcrumbs
1/4 cup water chestnuts, chopped
1/4 cup orange marmalade
2 tablespoons onion, chopped
2 tablespoons teriyaki sauce
1 beaten egg
1/2 teaspoon sesame seeds
PREPARATION:
Combine bread crumbs, egg, water chestnuts, onion, and 1 tablespoon teriyaki sauce in large bowl. Add turkey to the mixture and form into 3/4 inch thick patties. It should make four.
Preheat grill. Place patties on grill rack, cover and cook on medium heat. Patties should take anywhere between 12-14 minutes to cook.

While patties are cooking, combine marmalade, remaining teriyaki sauce, and sesame seeds in a saucepan. Cook on low heat until marmalade melts, making sure to stir often. Spoon over patties and eat with or without burger bun
