Question:

Baking brownies. Calls for one egg and I don't have one. Substitute?

I dont have applesauce or bananas to work as a subsitute. Is there anything else I can use?


Answers:
1 egg = 2 tablespoons liquid + 2 tablespoons flour + ? tablespoon shortening + ? teaspoon baking powder (Recipe from Substituting Ingredients by Becky Sue Epstein and Hilary Dole Klein. Add one or two drops of yellow food coloring if desired.)

OR gelatin (To replace each egg: Dissolve 1 tablespoon unflavored gelatin in 1 tablespoon cold water, then add 2 tablespoons boiling water. Beat vigorously until frothy.)

OR cornstarch (Substitute 1 tablespoon cornstarch plus 3 tablespoons water for each egg called for in recipe.

OR mayonnaise (Substitute 3 tablespoons mayonnaise for each egg called for in recipe.)

Mayonnaise is a good substitute for eggs.You can even make eggless cakes by using mayo.........try it they are really moist and delish!!!

2 Tbsp oil and 1 tsp unbleached flour, whipped together

1 egg = 2 tablespoons liquid + 2 tablespoons flour + ? tablespoon shortening + ? teaspoon baking powder

1 tbsp flaxseed + 1 1/2 tbsp hot water. Let sit for 5 minutes and it has the consistency of an egg.
Or 1/4 cup applesauce.

2 halves of an egg

FYI: a cake made with omnivorous mayo would not be eggless.

Flax mixture as mentioned above, or 1/4 c. prune puree or other fruit puree, egg replacer powder mixed with water, 1/4 c. silken tofu.

2tbs of starch
