How does this soup sound...Good or bad?
I was reading online recipes that turn instant mashed potatoes into soup, granted there will not be potato chucks in it like I prefer
I have garlic chive instant potatoes, you add 4 cups of milk and the you add in salt pepper and celery salt, I want to edit this and use celery stalk pieces, and toped with bacon and cheese on top. Also I have instant cheese potatoes I can use the same recipe with and skip the cheese topping and just add bacon to it.

Sounds like an easy way to make potato soup. You might want to saute your celery in a little butter or margarine before you add it to the soup so it won't be so crunchy. Otherwise, you might have to cook the soup for a while to get the celery soft.

I'd cut the amount of potatoes together. Half garlic-chive, half cheese. Real celery sounds great, the bacon sounds great, and then you can still add a little more cheese and still get the garlic-chive taste.
At least that's what I'd do. It sounds yummy!

I don't know..sounds kinda sketchy to me. Sounds like when you try to make instant potatoes and you add too much milk or water and they get all watered down and gross. But who knows it's worth a try anyways!!
Sounds great although I am not a big fan of celery stalk pieces, but doesn't mean I won't eat it. Just think about who you are cooking for and what they like.
I would start with sauteeing a diced onion, along with the diced celery then do the milk (I would do 1/2 water and 1/2 milk) and the mashed potatoes. You can also add diced leftover ham to make it heartier. I say, why not. The ingredients are cheap enough that if it doesn't work out for you, go back to the drawing board. Have fun! :o)
I've had potato soup made with instant potatoes and it was good.
If you want, nuke one or two potatoes then cube them up to add to the soup so you can have the best of both worlds.
It's all still potatoes, only it's not so time consuming. Believe me, if our mothers and grandmother's had instant foods and microwaves they would have used them too!
Heat your milk in the microwave first for about 1 minute.
cook your bacon and keep 1 tsp of drippings for your soup.....
melt butter in a pan about 4 tablespoons, toss in your celery cut finely and cook for 2-3 minutes.add bacon drippings....
sprinkle slowly 2 tablespoons of flour in the mixture and keep whisking with a spoon...
Add milk slowly to the mix in the pan and keep stirring... add your potatoes gradually after that not all at once and keep stirring until you have the desired thickness(you might not need the whole package of potatoes).... add your salt and pepper about 1/2 tsp salt and 1/4 tsp pepper...
remove from stove and grate some cheese on top.. not too much you don't want to overpower the soup.. sprinkle small bits of bacon....

IT TAKES... only a couple of Minutes to COOK.... Cut Up... POTATOES... in my pressure Cooker!
It seems that MANY.... have forgot ... HOW... Useful the Pressure Cooker... can be!
I use.... LEEKS... in my Potato Soup... and substitute... half ... Whole Milk... AND.... half....."Half & Half" as it makes ... A very Rich and Creamy ... POTATO Soup!
