TACOS!!!!!!1

I like making a meal called Cow Pot.

It's brown rice with chunks of hamburger and diced bell peppers. Having the green, red and yellow bell peppers in there adds good color.

You can substitute with whatever kind of meat you like or however healthy. I drain the fat from meat to make it less saturated. Add spices to the meat while it cooks as well. Whatever kind of spice you like on meat, I leave it to the individual.

Add a bottle of soy sauce to the table and presto, you got a nice tasty meal.

And if you make more than enough for two, you'll have an easy to heat left over.

Rachel Ray's "You Won't be single for long pasta". It is so yummy! Here is the link!

Red beans and rice...

cook some rice.. white or basmati or brown - whatever you have on hand.
Onion - chopped and fried in a tablespoon of olive or other vegetable oil.
Can of kidney beans, drained and rinsed to remove excess salt.
Fresh or frozen chilli or chilli powder to taste.
Can chopped tomatoes or fresh tomatoes skinned and chopped - add to softened onion.

If you have any red and or green peppers around chop them up and add to the onion.

Heat it all through and mix together.

Enjoy!

You could make a stir fry. Most of the big supermarkets will have meat already sliced up with veggies for cheap money. You can serve two with one package, which is usually about $6. Then just add it to some white rice, and top with a little soy sauce. VERY easy since you don't even need to chop everything up. It's usually one of my secrets I bring to pot lucks and things since everyone loves it, and it hardly uses any dishes.

I would spend 9 bucks and get some lumbrusca red wine and throw some ramen noodles on a plate. dinner is served

Cubed pork steak. Buy 2 nice pieces, season however you like, fry in some oil in non stick skillet. It only takes about 10 minutes. Serve on nice sesame buns with lettuce and mayo. Buy a box mix of pasta salad and follow directions. Dessert could be fresh pineapple, pears, or strawberries.

Turkey Burgers, if you cook them right they tast like beef and are super juicy Use 1 1/2 pounds of turkey 93% lean 1/2 cup of gruyere 4 thinly sliced scallions 1/4 of breadcrumbs 1 minced garlic clove salt and pepper and mustard mix all that together and cook. set grill to high lightly oil grill then grill 2 min per side then on the top rack of your grill cook 5 min per side then shut off half of the burners the move down agian and cook for another 2 min per side. the take off the grill put the burgers on buns and add any accompaniments

Hamburger Stroganoff
1 pound ground beef or turkey
1 tbs. butter or oil
1 onion, chopped
1 clove garlic, minced
1 can cream soup (mushroom or chicken)
1/2 cup water
salt and pepper to taste
1 cup sour cream, optional

Heat the oil or butter and sauté the onion and garlic until soft. Add the meat and brown, then drain of any extra fat.

Add the soup, water, salt and pepper and heat through.

Remove from the heat and stir in the sour cream if you're using it.

Serve over rice or egg noodles.

Taco Salad
If you have leftover taco meat, just use that of course to make a "different" meal from leftovers.

1 pound ground beef or turkey
1 (16 ounce) can tomato sauce
1 Tbs. minced dried onion or 1/2 an onion, minced
1 tsp. garlic powder
1 Tbs. chili powder
1 tsp cumin
salt and pepper to taste

Brown the ground meat. If you're using a fresh onion, cook it with the meat. Add the seasonings and tomato sauce and simmer 10 minutes.

1 head lettuce, chopped
1/4 cup sliced black olives
1 cup (or more) shredded Cheddar cheese
3 tomatoes, chopped
1 can (15 ounce) beans, black or kidney or dressed up black beans
1 cup crushed tortilla chips
1 avocado, sliced
Italian or Catalina salad dressing or salsa

Make up the salad and add the slightly cooled ground meat mixture.

boneless skinless chicken breasts or equivalent chicken tenders
1/4 cup melted butter
1/2 tsp garlic powder (or probably a couple of minced garlic cloves)
1 Tbs Dijon mustard
1 tsp Worcestershire sauce
1/3 cup bread crumbs
1/3 cup grated Parmesan cheese
1/8 cup dried parsley

Mix together the butter, garlic powder, Dijon, and Worcestershire in a dish. (I typically use old pie pans for this.)

Mix the bread crumbs, Parmesan, and parsley together in another.

Dip the chicken in the butter, then in the bread crumbs, then place in a buttered or greased 9x9 or so pan. Bake at 350 for 50-60 minutes, until done through.

love the convenience of those big bags of boned, skinned chicken breasts. I can adjust the size of a recipe easily by adding or subtracting one. They thaw quickly in the microwave if you forgot to plan ahead!

If you need to cut one up, do it while still partially frozen. It's much easier to cut that way.

Have leftover chicken? Chop it up and put a 2 cup portion in the freezer for a later recipe. Use for chalupas, creole chicken, fried rice, enchiladas, or soup.
