These are the best homemade cookies I have ever made! You will love this recipe!!

PB and Chocolate Chip Cookies
INGREDIENTS
1 cup butter
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon salt
2 cups peanut butter chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the butter and sugar. Stir in the eggs and vanilla. Combine the flour, cocoa, baking soda and salt, stir into the creamed mixture. Finally, fold in the peanut butter chips. Drop cookies by heaping teaspoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until set. Cool on wire racks.

Mom's Oatmeal Raisin Cookies
INGREDIENTS
1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3 cups quick cooking oats

DIRECTIONS
In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Chocolate Chocolate Chip Cookies
prep: 11 minutes / cook: 40 minutes / yield: 40 cookies

1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup butter, softened
1/2 cup packed dark brown sugar
1/2 cup granulated sugar
1/3 cup unsweetened cocoa
2 large egg whites
1/3 cup semisweet chocolate minichips
cooking spray

1. Preheat oven to 350 degrees.

2. Combine flour, baking soda, and salt in a large bowl.

3. Beat butter and brown sugar with a mixer at medium speed until light and fluffy; gradually add granulated sugar, beating well. Add cocoa and egg whites, beating well. Gradually add flour mixture, beating until blended. Stir in chocolate minichips.

4. Drop by rounded teaspoonfuls 1 1/2 inches apart onto baking sheets coated with cooking spray. Bake at 350 degrees for 10 minutes. Cool on pans 2 minutes or until firm. Remove cookies from pan; cool completely on wire racks.

Easy Peanut Butter Cookies
prep: 25 minutes / cook: 28 minutes / yield: 4 dozen

1 2/3 cups all-purpose flour
1 1/2 tablespoons cornstarch
1 3/4 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup packed brown sugar
1/4 cup vegetable oil
1/4 cup granulated sugar
1/4 cup creamy peanut butter
1 1/2 tablespoons light-colored corn syrup
2 1/2 teaspoons vanilla extract
1 large egg
cooking spray
3 tablespoons granulated sugar

1. Preheat oven to 375 degrees.

2. Combine flour and next 3 ingredients in a bowl. Beat brown sugar and next 3 ingredients with a mixer at medium speed until well blended. Add corn syrup, vanilla, and egg; beat well. Stir in flour mixture.

3. Coat hands lightly with cooking spray, and shape dough into 48 (1”) balls. Roll balls in 3 tablespoons granulated sugar, and place 2 inches apart on baking sheets coated with cooking spray. Flatten cookies with the bottom of a glass.

4. Bake at 375 degrees for 7 minutes or until cookies are lightly browned. Remove from pans, and cool cookies on wire racks.

These won second prize at the state fair. The reason they didn't win first is because my raisins weren't "evenly distributed"! Raisins are optional -- I usually leave them out. This recipe is intended for a low altitude. For high altitude adaptation, see below.:

Oatmeal Cookies:
1 cup butter, softened (NO SUBSTITUTES!)
1 cup brown sugar, packed
1 cup granulated sugar
2 eggs
1 tsp. pure vanilla extract
1 tsp salt
1 tsp baking soda
1 1/2 cups flour
3 cups rolled oats (quick variety)
1/2 cup shredded coconut
1 cup raisins (optional)

Cream butter, sugars and eggs with an electric mixer. Add vanilla, salt, soda and flour. Mix well. Fold in oats, coconut and raisins (if desired).

Drop by heaping teaspoonfuls (I usually use the medium Pampered Chef scoop) onto an ungreased cookie sheet.

Bake at 350 degrees Fahrenheit for 10-15 minutes -- until golden on edges, but not totally browned. Let sit on pan for 1 minute and then remove to a cooling rack.

These make a chewy cookie. For a crisp cookie, bake longer.

High altitude adaptation: Change flour amount to 2 cups. Change butter to 3/4 cup. Add 1/4 cup applesauce.

Well, this isn't really a "homemade" recipe, but it is a spiced up version of a store bought cookie dough.

1 roll of Choc. Chip Cookie Dough
1 can Pecan Supreme Frosting (the frosting for German Choc Cake)

Mix 1/2 frosting into the cookie dough, roll cookie into balls and place on cookie sheet. Bake as directed on cookie dough. You may have to add a min or 2 extra time based on your oven.

These are very moist, chewy and mmmm, a wonderful suprise to a choc chip cookie, and it's sooooo simple. No one will know you didn't spend tons of time making them from scratch!!!
