What is your favorite meatloaf recipe?

I like to make meatloaf muffins, instead of a loaf.... they cook much faster (in about 20-25 mins). And my favorite recipe is Paula Deen's Cheeseburger Meatloaf. It's so yummy and different than regular meatloaf. It uses Ritz crackers, sour cream and cheese look it up on foodnetwork.com or if you can't find it email me and I'll send you the recipe.
I don't follow a recipe exactly, I make it how we like it.
Ground beef, sometimes I mix in some ground sausage, I add in salt, pepper, breadcrumbs (sometimes seasoned) some Worcestershire sauce, ketchup and a couple of eggs depending on how much beef there is. Mix it up and put into a loaf pan, I make an indentation in the middle. Put the loaf on a cookie sheet and bake at 350 until done. About the last 15 minutes of baking I put ketchup on the top and maybe some brown sugar, or if I'm in the mood I'll use BBQ sauce in place of the ketchup. You can always put cheese on there too.
If you want Italian style, I use pizza sauce in place of the ketchup, don't use the Worcestershire, use seasoned breadcrumbs and a couple dashes of Italian Seasoning, I usually flatten this out into a rectangle, spread pizza sauce in the middle, top the with mozzarella cheese, roll it up, place in loaf and bake as the first. 15 minutes left I put pizza sauce on top and more mozzarella.
Always let your loaf sit for about 10 minutes before cutting into
And don't worry, you can't screw up meatloaf.
1 pound of ground sirloin
1 small sweet onion chopped
3 gloves of garlic minced
2 shots of Worcestershire sauce
1 large egg beaten
1 palm full of bread crumbs (regular)
salt and pepper to taste.
Sometimes, I've put Parmesan cheese in it or smokey barbecue sauce.
Preheat oven to 350
I scoop mine into a 12 cup muffin tin that has been sprayed with cooking spray.
Bake fro 25-30 or no longer pink inside.
Top with barbecue sauce right before taking them out.

The way my parents cook it is like they take out the meat and miz in some onion soup mix and other herbs and spcies...so you cna smell it cooking as soon as you walk in our house..Then eat with some ketchup

I just take ground beef, salt, pepper, garlic powder, fresh chopped onions (size depends on preferences), breadcrumbs (italian style) and eggs to hold it together. I make mine with A-1 when I have it and it comes out so much better. I just pour it in so I don't know how much I use. The loaf doens't taste like A-1 either, it just gives it a little more flavor. I do use probably 1/4 bottle or so I would say for like 3 pounds or so of meat. I always wanted to try adding ground pork and/or ground turkey too bt never have.

Ground beef can be adjusted.. Occasionally, i may add ground pork .
I make 12- 24 mini meatloaf pans worth at one time, then I pre-cook and freeze to reheat 3 min. in microwave for when ever i need a quick tasty dinner..
My husband takes his meals to work.. He says it's better than the restaurants.. ah, the sweet!..
Great too for when unexpected company comes over. It looks like I've been fuzzin all day.. but, haven't.. a few pretty garnishes, baked potato, salad and roll and you have a complete meal!
I lightly spray with Pam all my pans first, so the meat pops out easier..
4 lbs. Ground Beef
1 can Evaporated Milk
1 Lrg diced onion
1 Red or Green Pepper , diced ( substitute if want 1 -can diced Green Chilies)
2 Eggs , slightly beaten
approx. 1-2 cups of the following :
I use Oatmeal for binding, as adds a healthy fiber and for taste .( saltine crackers or a pre made bread coating or crushed stuffing mix could be used.)
1 capful of liquid smoke, either hickory or mesquite flavor
fresh Garlic , minced to taste ( I use about 1- tbl.)
fresh Ground Pepper to taste
fresh Ground Sea Salt to taste, or seasoning salt
There are tons of topping ideas i occasionally use.
I mix: Ketchup , brown sugar, apple cider vinegar , cumin and garlic is our favorite.. I place on last hr. to 1/2 hr. cooking time..
You can have all kinds of fun making meatloaf..
like place 1/2 mixture in pan then a large slice of your choice cheese down length of , and top with more meat mixture.. Surprise! yummy.
Especially good with Pepper Jack cheese, swiss or cheddar.
I bake at 350 for 1 1/2 hrs. or until there's no pink inside..

2# ground beef
3 eggs
meat loaf seasonings
1/2 pkg. saltine (soda) crackers
1 med. onion diced
1 celery stick, diced
1 sm. can mushrooms, stems and pieces
salt, pepper
Preheat oven to 350 d. fah. Mix together in bowl. Put into greased meat loaf pan. I use a 2-piece pan so the fat can drip out the bottom. Put in oven for an hour.
Note: You can also make a sauce for the top if you want: I use a small serving bowl, add a tbs. of olive oil, ketchup, horseradish, a dash of rice wine vinegar... mix and spread on top loaf.....
Good with cornbread and mashed or baked potatoes.
1 1/2 pounds ground chuck
1 onion, chopped
2 ribs celery, chopped
2 cloves garlic, chopped
2 eggs
2 tbsp. Worcestershire sauce
5 dashes hot sauce
2 tbsp. ketchup
Breadcrumbs for binder
Salt, pepper, dry mustard powder and dried thyme to taste.
Preheat oven to 350 degrees. Place onion, celery, and garlic in skillet and saute with olive oil for five to seven minutes until translucent and tender and cool briefly. Meanwhile, place all other ingredients into a large mixing bowl and add in the cooled, cooked vegetables. Mix meatloaf mixture together well while keeping it light in texture. Place all of the mixture on a greased roasting pan and shape into a loaf. Meatloaf cooked this way ensures the fat can drip out and that the exterior gets a nice crust in the oven all around. Place in oven and cook for 30 minutes. After 30 minutes, take out meatloaf and cover with more ketchup. Cook for another 30 minutes or longer depending on the the thickness of the loaf made. Slice and serve with mashed potatoes and veggies.
Southwest Turkey Loaf
1 1/4 pounds Ground turkey
1/3 cup salsa
1 egg
1/2 cup ground nacho cheese flavoured tortilla chips
1 envelope low sodium taco mix
1/4 cup chopped onions
Using your hands mix all ingredients together. Place the mixture in a loaf pan and bake at 400 about 35-40 mins. once done let it sit in the pan for 10 minutes before unmolding onto a plate
Serve with extra salsa
Totaly awesome recipe! But can only do it in the fall when you get pumpkins!
Meatloaf Stuffed Pumpkin
“Log Cabin Campfire Cookin’” by Coleen Sloan
1 small pumpkin, cleaned, will fit inside a 12”, deep, Dutch oven.
Oil
1 ? lb hamburger
1 medium onion, chopped
? tsp. salt
? tsp. pepper
1 Tbs. Log Cabin seasoning (Emerils Essence works too)
2 ? c. Corn Flakes, Wheaties, Cherrio’s, or Shredded Wheat
2 eggs
1 can cream of celery soup
? tsp. granulated or powdered garlic
1 can tomato sauce
Mix all ingredients in a bowl, except tomato sauce. Warm
and oil a 12”, deep, Dutch oven. Fill pumpkin with meat mixture and place filled pumpkin inside oven. Pour about 1 ? c. water in oven and cover. Bake about 1 to 1 ? hours until done. You can smell the flavors when done.
Serves 6 to 8
