I need side dish ideas to go with Bourbon Pecan Chicken?
I'm making Bourbon Pecan Chicken for some friends this weekend and I need some ideas for what to make with it. The sauce is a little sweet and quite strong in flavor, so I need something that will compliment, but not compete with it. I'll consider anything, vegetables, pastas, potatoes...

sauteed fresh vegetables such as yellow summer squash, zucchini, thinly sliced carrots, red and green bell peppers, etc. (onion is good in it too)
My first instinct was Yams. You could just cook the yams, mash them with butter and possibly a hint of nutmeg. That would be yummy too.
I wouldn't candy them as you might end up with both dishes competing with the other.
Fresh, not canned Steamed Green Beans(possibly with almond slivers (juxtaposes the pecans)) and Wild Rice
Make some plain white rice, but use chicken broth instead of water, and then add in some cut up veggies (you can cook in the water as it's boiling)......I love it with peppers (red, yellow, green, whatever you have), but you can add some broccoli, carrots cut up real small, whatever you want......nice and simple :)

Twice baked Potatos and green bean casserole
Ultimate Twice Baked Potatoes
INGREDIENTS
4 large baking potatoes
8 slices bacon
1 cup sour cream
1/2 cup milk
4 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Cheddar cheese, divided
8 green onions, sliced, divided
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Bake potatoes in preheated oven for 1 hour.
Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
Bake for another 15 minutes.
