I have lots of Yellow Summer Squash from the garden...good ways to use it?

I also have vidalia onions and red potatoes. I'm a little tired of sauteeing the sliced squash with the onions. I'm looking to get some new ideas for using it.

Make Squash Puffs! Slice the squash and add some chopped onions. Cover with water and boil until tender. Drain. Mash. Add an egg, a can of whole kernel corn (drained), and a handful of cheddar cheese. Add a bit of flour and cornmeal until the consistency is like hushpuppy batter. (You may need to add a little milk as well.) Then drop spoonfuls into hot oil and fry the same way you would fry hushpuppies. (I'm sorry I don't have exact measurements. As long as the consistency is like hushpuppy batter, you've got it right!)

I like to just cook squash and onions together and eat it that way. I invented Squash Puffs with the leftovers once and now we love them!

Fry up the squash. I love fried squash and fried okra.

Try using them as a filler in soup. they cook down well.

Leave the skin on & cut the squash into cubes, like you are making mashed potatoes. Boil them until they are tender. Drain off the water & put butter & brown sugar on them. Easy & yummy!!!!

I love summer squash!

My favorite is to grill slices 1/4" to 1/2" with a little butter and salt.

I also love to saute with a tad of butter and a couple other veggies, add eggs salt and pepper and I end up with a wonderfully tasty breakfast burrito.

Squash is one of my favorite fried foods. I slice the squash thin, coat with egg then flour and fry in a little veggie or olive oil. Add a little salt and pepper to the flower for taste.

Squash Casserole:
2 cups cooked squash
1 cup evaporated milk
1 cup shredded cheese
1 cup chopped onion
2 eggs, lightly beaten
Salt and pepper to taste
6 tbsp. butter
1/2 cup breadcrumbs

Place cooked squash in bowl with milk, cheese, onion, eggs, salt and pepper. Mix together the bread crumbs and butter in another bowl. Pour squash mixture into a greased casserole dish and top with buttered breadcrumbs. Top with extra cheese if you like. Bake at 350 degrees for 40 minutes.

INGREDIENTS
2 tablespoons butter
3 yellow squash, sliced
1 pound lean ground beef
1 onion, chopped
3 jalapeno peppers, seeded and diced
2 eggs, beaten
1/2 cup mayonnaise
1 cup shredded Cheddar cheese
salt and pepper to taste
1 cup crushed buttery round crackers
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Melt butter in a large skillet over medium heat. Saute squash in butter until tender, about 10 minutes. Set aside.
In a large skillet, cook the ground beef, onion, and jalapeno, stirring until beef is evenly browned. Drain off grease. In a large bowl, mix together the squash, eggs, and mayonnaise. Stir in the ground beef mixture and Cheddar cheese. Season with salt and pepper. Pour into a 9x13 inch baking dish, and sprinkle cracker crumbs evenly over the top.
Bake for 20 minutes in the preheated oven, until heated through, and the top is nicely browned.

Slice and place in a dehydrator, then use the dried squash for soups and stews this winter.

I personally love to cut up fresh, raw squash in my salad. It has a delicious mild flavor and adds a nice crisp texture... and as with all fruits/veggies they are healthier in their natural state when/if possible.
