Can you suggest a recipe simulating duck, but with no duck in it at all?

MOCK DUCK

1 lb. hamburger
1 med. onion, chopped
Salt and pepper to taste

DRESSING:

3 tbsp. onion, chopped
3 tbsp. celery, chopped
1/4 c. butter
2 c. bread crumbs
Salt and pepper to taste
Poultry seasoning to taste
1/2 c. milk

Combine hamburger and onion and place in a casserole. Saute onion and celery slowly in butter for 10 minutes. Add bread crumbs and seasonings, moisten with milk. Cover meat with dressing. Bake at 350 degrees for 2 hours. Yield: 6 to 8 servings.

MOCK DUCK (ROLLED STEAK ROAST)

1 thin round steak
1/2 lb. pork sausage
1 egg
1/2 c. regular or Italian bread crumbs (or to taste)
1 tsp. poultry seasoning (or to taste)
6 carrots
6 potatoes, cut in quarters

Pound steak with mallet to tenderize. Mix sausage, egg, bread crumbs and poultry seasoning until well blended. Spread mixture on steak. Roll steak up and tie with string to hold together. Brown all sides in a large heavy duty pan, and drain off all fat. Place grid in pan and add water to the bottom.
Add meat, potatoes, and carrots. Bring water to a boil, cover pan and reduce heat to simmer. Cook 1 to 1 1/2 hours or until tender.

You can buy vegetarian duck in a tin from Chinese supermarkets. It's what Chinese Buddhists buy during periods of vegetarian events.

You can use it any way you like, treating it as duck meat, so, basicly, you can use it in any duck-type recipes.
