Fold in both sides envelope fashion and roll. Makes 10 burritos.
PASTA SALAD
Macaroni or spaghetti
Peas
Broccoli
Bacos or bacon
Ranch Dressing
Carrots
Pimentos
Tomatoes
After you've boiled, drain your spaghetti. Cook and drain your vegetables. Mix together and add Ranch Dressing and bacon and it's a super meal with a salad too. Serve hot or cold.
SAUSAGE AND PEPPERS
6-8 Italian sausage links, sliced
1 large can Hunts sauce
1 large green bell pepper
1 large onion, sliced
1/4 tsp garlic powder
1 tsp fresh or 1/2 tsp dried basil
1/2 tsp fresh or 1/4 tsp dried oregano
2-3 T olive oil
3-5 cloves garlic, whole
1/4 cayenne or jalapeno pepper, minced
1 bay leaf
1 small can mushrooms
1 T balsamic vinegar
Slice the sausage into 1 1/2 inch thick slices. Core and slice the pepper, and slice the onion lengthwise, 1/2 inch thick. Finely mince the hot pepper; you may substitute dried red pepper flakes or cayenne powder. Adjust amount according to heat desired.
Brown the sliced sausage in the olive oil. When the sausage is half done, add the whole cloves of garlic and allow to brown in oil, but if garlic browns too rapidly, remove to a cooler side of the pan. Crush the garlic cloves into the oil with the tines of a fork when they brown. Add the peppers, onions and cook until edges of onions begin to brown.
Deglaze the pan with the balsamic vinegar. Reduce heat and add the sauce, bay leaf, and remaining ingredients. Simmer over very low heat for 30 minutes. Last 5 minutes, stir in the can of mushrooms. Adjust seasonings, adding salt and pepper to taste.
Remove bay leaf and serve with portuguese pops, bulkie rolls, hoagie buns or any hearty roll with a substantial crust.
For a special occasion, layer on a bit of Parmesan or mozzarella cheese and place under the broiler 2-3 minutes before serving.

. Deep, Large rectangle casserole pan ((((if you want to make enough to feed a whole lot...double recipe and get another pan))))
. non-stick cooking spray (can use butter or olive oil spray)
Preheat oven to 375 degrees
Ingredients:
. Family size bag of Oreda tator tots
. Two large cans of Campbell's cream of mushroom condensed soup...(can substitute with cream of onion)
. 1 pound of ground chuck browned (optional, do not have to add the meat)
. 2 large blocks of cheddar cheese (you can grate or slice it)
. Salt
. Pepper
. You can also chop up onions, peppers etc to use in the layers too.
Prep:
. Spray casserole pan down with cooking spray
. Line tator tots in neat rows along the bottom of pan till the entire bottom is filled
. Spread one can of cream of mushroom over entire surface of bottom layer of tots(make sure it gets full coverage, if not add more)
. Salt and pepper (I use garlic salt sometimes.)
. Sprinkle browned hamburger over surface or onions, peppers, etc.
. Add a layer of sliced or grated cheddar cheese(full coverage) Moisture between layers is the key!!
. Add next layer of tator tots on the entire surface over the cheese
. Spread second can of cream of mushroom over entire surface
. Salt and pepper again
. Sprinkle another layer of browned hamburger
. Last layer of cheese on top
Cook on 375 for about 40-60 minutes or until cheese on top is a nice medium brown.
Trust me..this stuff is sooooo good lol.
You have to put a full can of condensed soup between the layers or the moisture content will not turn out right....oh and don't add water to the soup..just spread it like icing:) it cooks into the tator tots. I get a big can and just put half of it on each layer, but you can use the two small cans on each.
One pan will feed many, many people...but you can make two pans by doubling the recipe ingrediants..two pans is A LOT though!
Taco Dip
all you need:
some chedder cheese
a package of cream cheese
a can of precooked chilli
a bag of torttia chips
a flat kinda shallow container
spread the whole package of cream cheese on the bottom of the container. pour the can of chilli on top. cover the top with cheese, put in the microwave for about 8 mins. eat with the chips out of the container. Enjoy!

These are two of my favorite pasta dishes for the summer...and the lemon pasta is even good chilled. I have made them using a variation of pastas, depending on whether they are a main dish, or a side dish, and they always come out great!

I have made these a gazillion times, and always get rave reviews! I have also subbed the peas in the alfredo with steamed broccoli or asparagus! Both divine, and all easy and fresh for the summer!
