Need some simpe recipes?

I'm living with my dad and neither of us can cook very well. Since he's been working 50+ hours a week, eating is his last priority. He only eats once a day. And that around 3pm. Then he would come home and sleep.

Can someone please tell me some easy cooking recipes? Nothing too complicated and something HEALTHY. Please help me.

Hi Terrance, I hope these help, maybe you can get your dad to eat more than once a day, that's not too healthy for him.

EASY PASTA

1 pkg. pasta (Ziti, Rigatoni)
1 can Del Monte Italian stewed tomatoes
1 can Del Monte Italian zucchini
1 sm. can tomato sauce
Parmesan cheese

Pour into saucepan: tomatoes, zucchini and tomato sauce. Heat thoroughly. Cook pasta as directed. Pour tomato mixture over pasta and top with cheese. Excellent and so easy, plus low fat!
Add chicken chunks for variety.

CHICKEN PASTA SALAD

3 Chicken Breasts
2 cups Rotini or Shell Pasta (cooked, rinsed and cooled)
1/2 Red Pepper
1/2 Green Pepper
8-10 cherry tomatoes (halved)
1/4 cup Feta cheese crumbled (optional)
1/4 Ceasar Salad Dressing (more or less to taste and to coat)

Cook chicken until no longer pink in middle. Chop into small pieces. Chop peppers and add to tomatoes in large bowl. Add chicken, pasta and feta to large bowl. Add Ceasar salad dressing and mix well. Refigerate until needed.

EASY LUNCH SANDWICHES

1 pkg. buns
1 can grated Spam
1 can mushroom soup
Grated Velveeta cheese or thin slices

Mix grated Spam, mushroom soup. Put on bun, put cheese on mixture. Top with bun. Wrap with foil. Heat in oven until warm.

HASHBROWN CASSEROLE

1 (32 oz.) bag frozen hashbrown potatoes
8 oz. carton sour cream
1 can cream of chicken soup
1 med. onion, chopped
1 stick butter, melted
10 to 12 oz. grated cheddar cheese
Season to taste

Combine all ingredients and put in 2 quart casserole dish. Top with: 1 stick melted butter.


HOT DOG CASSEROLE

1 pkg. hot dogs
1 lg. onion
6 or 7 potatoes
2 cans golden mushroom soup
1 c. milk
Large casserole dish

In large casserole dish add sliced potatoes, onions, hot dogs. Layer starting with potatoes, onions and hot dogs, when finished mix soup and milk, pour over mixture. Simmer on low heat until potatoes are done, no need to stir.

A simple recipe I like to make is Kraft DinnerMac-n-Cheese, and add some ground beef to it. I fry the regular ground beef, add some worcestershire sauce, cayenne and black pepper (add the cayenne pepper last or it may get too hot to eat), Heinz ketchup, and some extra cheddar marble cheese...no need to add too much salt cause the sauce and cheese is salty enough. If you are health consious, use extra lean beef, low fat milk and veg based or soy based margarine for the cheese sauce (in the KD), and fat reduced block cheese or another kind of fat free cheese. It takes about 10 minutes or so to cook the KD and the same time for the beef (maybe 14 minutes)..and when it is done, you have a very filling meal. hope this helps.

I know the perfect site 4 you. It has all sorts of recipes and I think u and ur dad would really like them. I also know another site, umm... I just dound this one so here you go.

Turkey Chili:

Chop an onion and brown it in canola oil. Add a package of ground turkey and cook thoroughly, then add the contents of a chili seasoning packet. Add canned beans (black or kidney beans) and canned mexican-style tomatoes with green chiles and cook until bubbly. You can also add canned corn. Serve with brown rice (you can use the microwave kind) and shredded lowfat cheese.

Pasta primavera:

Cook a package of whole wheat pasta. Chop and brown some garlic in oil in a pan. Add some sliced veggies--red and green peppers, thinly sliced carrot, green beans, mushrooms etc. Add your favorite pasta sauce. You can also use frozen veggies. Serve over pasta with some parmesan cheese.

You can also get a foreman grill. Then you can marinate salmon steaks or chicken breast in a marinade (look for a lower-sodium one at the store) overnight in ziploc bag, and then place it on the grill when you're ready to eat.

Greek Salad Sandwiches:
Chop romaine lettuce. Mix with chopped tomato, cucumber, canned chopped olives, and feta cheese cubes (you can buy them in a jar or package), and italian dressing. Stuff inside whole wheat pita bread with cooked chicken breast strips or sliced turkey from the deli aisle.

Make a simple chili. Brown 1 lb ground beef, drain. Add 1 can tomato sauce, I can chili beans, 1 can chili style stewed tomatoes(delmonte brand or any stewed tomatoes). Add a little chili powder also. Heat through. You can add cheese just before serving if you like. Serve with some cornbread or some saltines. This recipe will make plenty for two or three hungry fellas.
Also, don't forget about the oh so easy Hamburger, Chicken, and Tuna Helpers.
Or maybe spaghetti. Brown 1 lb ground beef. Add 1 jar spaghetti sauce($1 for walmart brand and it's good) and some italian seasoning to the meat and there you have some hearty meat sauce. Boil some spaghetti noodles, pour the sauce over and serve with some garlic bread, and a vegetable if you feel like it.
Also, I like to buy those Totinos frozen pizzas they sell at walmart for $1.
1 pizza per person, and you can make them your own by adding any extra toppings that you like.
Sloppy joes are easy. Brown 1 lb. ground beef. Add 1 can sloppy joe sauce. Serve on buns. Maybe throw some frozen french fries on a cookie sheet and bake, then season them to go with the joes.
