Is it safe to eat raw soybeans? What is the best way to prepare soybeans?


Answers:
Eating raw soybeans won't hurt you. But, like most beans, they'd taste better if you soaked them for 24 hours, and cooked them. Soybeans are so delicious that you don't have to do much.

It's very simple: Soak them. Either soak them for 24 hours or use this shortcut: put them in a pot with enough water to cover them by two inches, bring to a boil, let them sit, covered, for an hour. Rinse the beans, and cook for 2 1/4 to 2 1/2 hours (cover the rinsed beans with water, bring the water to a boil, simmer for 2 hours). I like soybeans best with a little salt on them. That's all you need.

I went to this restaurant in Tokyo that served them with this sauce made with garlic, soy sauce, sugar, and chili sesame oil (which was delicious!), but they'll also taste delicious with a little salt.

I made up my own version:
1/4c soy sauce
2 tbsp of br sugar
1 tsp minced garlic
1 tsp of chili sesame oil
1 tsp vinegar

Mix well. Make adjustments to taste. If you use low-sodium soy sauce, you'll need less sugar, if you like it really hot, add more oil. If you don't have chili sesame oil, add sesame oil and 1 or two shakes of red pepper flakes, and let the whole thing sit for an hour before using. It's also great with dumplings.
