Answers:
Use Thailand jasmine rice, any brand. Cook it and leave it overnight in the fridge. The next day, the grains will be all nicely separated and dry.
Mix and toss some salt with the rice.
Cook the eggs first in a wok then stir in the rice as well as all other ingredients you might like to have. (chefs put the rice in first then make a hollow in the middle to cook the eggs but when amateurs like us to it, it just makes the rice sticky and wet with egg) It depends on the individual's creativity, you can have mixed vegetables, shredded chicken, lup cheong, anything.
Lastly, add soya sauce for color. Stir well.
You may serve fried rice with a small side of salad and some ketchup, it's up to you.
p.s. I dun use sesame oil in my fried rice. The peanut oil, garlic, onions, salt and soya sauce are enough seasoning to make a great tasting fried rice.

I'm talking about Chinese Fried Rice.

My mom says the best way to cook any fried rice is in a Walk.

1 tablespoon peanut oil
4 large eggs, lightly beaten
4 cups cold unsalted steamed white rice
3/4 teaspoon salt
1/2 cup thinly sliced scallion greens (3 to 4 scallions)
1 to 2 teaspoons Asian sesame oil
Special equipment: a well-seasoned 14-inch flat-bottomed wok
preparation
Heat wok over high heat until a drop of water vaporizes instantly upon contact. Add peanut oil, swirling to coat wok evenly, and heat until hot and just smoking. Add eggs, tilting wok and swirling eggs to form a thin even layer on cooking surface, and cook 30 seconds, then add rice and salt and stir-fry, breaking up eggs and letting rice rest several seconds between stirs, until rice is hot, 2 to 3 minutes. Add scallion greens and sesame oil (to taste) and stir-fry until combined well
