What does Vanilla do for baking!!!?!?!?

my friend and i were making cookies and he had no vanilla. i said it doesnt do anything but highten the sweetness so we should just add more sugar and it was a long argument..the cookies turned out quite good but i still wonder what vanilla does in baking.

Adds flavor. Just like cinnamon or nutmeg would do..
not necessary but very delicious =). The vanilla used in cookies is actually just an extract.. just a replica of real vanilla from pods that has a much stronger, sweeter flavor.

In baked goods, the flavor of vanilla can be quite subtle, but if you don't have it in there there's a certain something missing. It gives the final product some extra complexity, and makes things taste a little richer. It doesn't add any perceptible sweetness.
