Simple pancake recipes?
something different than regular pancakes but easy to make and dont need alot of ingredients, i dont have much.

I discovered when I was budgeting my money and my energy (lol) that you can get some boxed Jiffy brand muffin mix for about 60-80 cents, and use it as pancake mix. It has directions on the back, and when done correctly, come out pretty well, if I recall. They have blueberry and apple-cinnamon here. Yummy!
They also have corn muffin mix, which I'm sure you could use to make corn cakes. Fry them up like a pancake, and serve with lots of honey and butter. Doesn't that sound nice?
Or get your pancake mix or recipe, and add in things like strawberry jam, or different dried fruits.
The key is to be creative.

Pancakes
1 cup all-purpose flour
2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
3/4 cup milk
2 tablespoons melted butter or margarine
2 eggs, beaten
Combine all dry ingredients.
Preheat electric skillet to 380o.
Add butter and milk to eggs.
Add dry ingredients.
Stir just to dampen (not too much).
Adjust milk so it’s thin enough to pour.
make pancakes like normal but add something in while cooking them like chocolate chips or blueberries spinkled on top before flipping. . . yummy!!!
Or you can also top the pancakes with some kind of fruit and whipped cream after they are done . . .still yummy!!
Just go to the supermarket....you can the the pancake flour c/w recipes ( plug &play type). very2 simple !

APPLE AND CINNAMON PANCAKES
1 1/2 cups apple juice
2 eggs, beaten
1 cup flour
1/2 cup quick oats
2 tablespoons wheat germ
1 1/2 tablespoons baking powder
1 tablespoons grated orange peel
1/2 teaspoon cinnamon
2 tablespoons powdered sugar
1 banana, sliced
Beat together apple juice and eggs in a medium bowl. Add the flour, oats, wheat germ, baking powder, orange peel and cinnamon. Stir until well mixed.
Lightly grease a nonstick skillet. Make as you would pancakes pouring approximately 2 tablespoons batter mixture onto hot skillet for each pancake. Flip (only once) when bubbles begin to form around edges.
Serve with powdered sugar and banana slices.

SUPER SWEET SOUTH BEACH PANCAKES
2 eggs (slightly beaten)
1 c. wheat flour
1 c. skim milk
1/2 c. Splenda sweetener
1 tsp. vanilla
a pinch of salt
Mix ingredients together to form thin batter and prepare as you would traditional pancakes.
For 4-5 pancakes:
Ingredients:
50g plain flour
1 egg
125ml milk
few drops of Vanilla Essence
oil
1 tablespoon Custard(optional)
pinch of salt
Method:
1. Prepare 50g of thin batter using the above ingredients.
2. Cook like a traditional pancake
Serving Methods:
a) Lemon pancakes:
dredge the pancakes with castor sugar, sprinle lemon juice, roll up and garnish with lemon slices.
b) Jam pancakes:
Spread jam on each pancakes and roll up. you can add coconut powder if u wish
c)Honey pancakes:
Fold each pancake into quarter size. Arrange on a plate; pour honey over the pieces and serve.
no matter what mix you use for the batter, make sure you get a small bottle of "butter, nut, vanilla" extract. Just a few drops of it makes all the difference in the world to both taste and smell.
