Has anyone ever made cheesecake using a different kind of cheese?
I would like to know if you have ever made a cheesecake using another kind of cheese besides cream cheese, ricotta, mascarpone, cottage cheese or the usual kinds found in recipes. And I'd like to know how the cheesecake came out in the end.

So far people have mentioned cream cheese, sour cream, cottage cheese. but I asked if you ever made it with a different cheese. Not the usual stuff.

yes i tried one time. it really didnt work out so well. the flavor and texture was off. maybe i needed to change the liquid i used. i dont think i would try it again. but what the heck, you never know.
I also made it once with tofu for a friend...it really was good according to her...me? the jury is still out!
My mama uses sour cream in hers, but no other kinds of cheese that I know of...
PHILADELPHIA CREAM CHEESE CAKE
1 (8 oz.) pkg. cream cheese
3 sticks butter
3 c. sugar
3 c. Swansdown cake flour, sifted
1 1/2 tsp. salt
6 lg. eggs
1 tbsp. vanilla
Beat cream cheese and butter until smooth. Add sugar gradually. Add eggs alternately with flour in which salt has been mixed (suggest beating eggs all together in bowl). Add vanilla. Bake in 300 degree oven for 1 hour and 15 minutes or until done. Start in cold oven. Cool about 20 minutes in pan before turning out. Cake will keep indefinitely if kept tightly wrapped.
1 package cream cheese , 5-6 eggs, 1 stick butter
( unsalted ) 1/2 cup sour cream and 2 cups buttermilk and 2 cups cottage cheese , mix thoroughly and you've got the original cream cheese cake , bake for 25 minutes at 325* remove from oven set in fridge over night and splendiferous dessert next day
you can use ricotta cheese, it's actually called an italian cheese cake. it's not to good. when I make a cheese cake I only use cream cheese.
here is a simple recipe:
1 pkg of phil cream cheese
1/2 cup of sugar
1 container of whipped cream (cool whip)
add together and put in a pie crust and you will be tasting the best cheese cake.
