take 2 chicken breasts and stuff with the herby boursin, wrap with bacon and pop in oven. To go with it - slice some potatoes and onion (or leek is pretty good) and layer them alternatively in a dish with some butter and salt and pepper. Then pop some cheese and bread in a food processor and then sprinkle the cheesy breadcrumbs ontop of the onion and potatoes - pop in the oven for about 40 mins. Really tasty!

Open face Chicken Courdon Bleu is very elegant looking, and takes almost no time at all. For a meal for two:
Pound down two chicken breasts until they are very thin (about 1/4 inch or so is fine), lay a slice of deli ham over each, topped with one slice of swiss cheese. Sprinkle each with Italian bread crumbs, and bake at 400* until the chicken is cooked and the cheese is brown and bubbly.
Meanwhile, clean up some button mushrooms, sprinkle with a little salt and pepper and bake as is in the oven in a small dish. Mushrooms contain a LOT of water, so cooked this way they will create their own juice that is simply delicious. Garnished with parsley the smell is to die for, and they will make a lovely side.
For a second side serve a starch, something simple like rice pilaif or brown rice will be fine. You'll want something to soak up all that yummy mushroom sauce!
A white wine would go best with this dish, although because of the mushroom side dish, if you prefer red, it certainly would work too.
Chocolate dipped strawberries (or strawberry fondue!) makes a really easy, elegant and sensual dessert to enjoy after the meal.
Enjoy!
