Anyone know a flavorful, "poppin" recipe for meatloaf?

I like to put lots of onion, garlic, & celery salt in all my hamburger dishes. I've cooked many meals, but never meatloaf. I want a zingy, pop with lots of flavors idea. Need to know temperature to cook on & for how long.

Beefy Mushroom Meatloaf

4 oz. mushrooms, chopped
2 teaspoons butter
2 lb. ground beef
1/2 medium onion, finely chopped
1 10.5oz. can beefy mushroom soup
1/2 cup dry bread crumbs
2/3 cup quick cooking rolled oats
1 egg. lightly beaten
1/4 teaspoon pepper

Saute mushrooms in butter over medium-low heat until browned and tender. In a large bowl, combine mushrooms and remaining ingredients, mixing lightly until thoroughly blended. Spray a 7x11 or 9x13-inch baking dish with cooking spray. Bake at 350 degrees F for 45-60 minutes or until cooked through.

I've put half of my meatload mixture in the pan, then put some ham and swiss cheese, then put the rest of the meatloaf mixture. It stayed very juicy and flavorful and it was a nice change.

I add egg, bread crumbs, onion soup mix and salsa to the meat and mold it into a loaf, along with the seasonings you mentioned above. Cook it on about 300-325 for a good hour (depending on size) usually for around 2lbs. Enjoy!

I do a mexican meatloaf. Couple lbs of ground beef, couple eggs, good handful of breadcrumbs...garlic, onions and either taco/burrito/fajita seasoning, from the packet. Maybe some cubed up pepper jack cheese. mix it all up. shape your loaf and top with salsa. bake 350 for an hour, longer if you're using 3+ lbs of meat..use a meat thermometer to test and make sure juices run clear. If you over cook it and dry it out..top with more salsa! ; ) this meatloaf is a big winner in my house.

This is like a meatloaf casserole. I brown my meatloaf on both sides(to cut down on grease) then I put it in a casserole dish and add 2cans mixed vegetables, and either 2 cans whole potatoes or quartered peeled potatoes then I add 1to 2 cans tomato sauce with 1 can water bake at 350 degree preheated oven for about 1 and half hrs. (some ovens may take longer depending how big your meatloaf is, I usually use 2lbs. ground chuck) and add some rolls or bread and u have a meal that my kids love!

Here is a fast and easy recipe. If you can find Chipotle ketchup it gives it an even nicer kick.

Equal parts ground beef, ground turkey , and ground buffalo/bison (this gives a lot of flavor but is still healthy, if you can't get bison/buffalo use half turkey and half beef)

Add
1/2 of an onion finely chopped
1-2 eggs depending on size
1 1/2 cup bread crumbs
1/2 can French's Onion Rings
1/4-1/2 of a bell pepper (depending on your taste)
Two small splashes Worcesteshire
1 cup Ketchup
4 tablespoons Heinz 57 sauce
Garlic salt
Freshlly ground black pepper

mix together by hand, divide in two and place each into a loaf pan.

Cook 325 until pressure on top of loaf yields clear liquid. At that point put a light coating of either ketchup or romato sauce on top of loaf and return to oven for 5 minutes, or just until top begins to caramelize

Italian Meatloaf

Ingredients:
2 lb Lean ground beef
1 lb Italian sausage
1 1/2 c Cracker crumbs
2 Eggs, beaten
1 md Onion, chopped
1 Bell pepper, chopped
1/2 ts Salt
1/4 ts Pepper
1 ts Oregano
1 cl Garlic,minced
1 c Pizza sauce

FILLING:
1/2 lb Boiled ham,sliced thin
8 oz Grated Mozzarella cheese
1 cn (8 oz) mushrooms,drained

Prep:
Mix first eleven ingredients together.Reserve 1/4 cup pizza sauce. On a large sheet of wax paper,pat meat into a 10 x 13" rectangle. Arrange ham on top of meat mixture,leaving a small margin.Spread mushrooms over ham.Sprinkle cheese over all.Reserve small amount of cheese.Start at 10" size and roll meat like a jelly roll.Use wax paper to lift.When rolled tightly,seal edges.Place seam side down in a 9 x 13" pan.Brush with reserved pizza sauce.Bake 1 1/4 hours @ 375 degrees,10 minutes.Before done,sprinkle reserved cheese over and finish baking.Serves 10 to 12.

Mom's best Meatloaf

1 lb. lean ground beef
1 egg
1/2 cup bread crumbs
1/2 cup salsa (medium or hot is best)
1 chopped onion

Mix everything together and form into loaf in loaf pan. Put a shallow groove in the top and fill the groove with ketchup.
Bake at 375 deg F for 1 hour.

I use onion, celery, egg, crushed bbq potato chips and pretty much the same for the seasonings. The nice little extra that goes in is stove top stuffing.Yum! Bison ground beef is tastier,leaner and healthier. I stick with ketchup for the sauce, but salsa adds a good kick.
Sometimes the best meals turn out just by "winging it".
The cooking instructions are pretty much the same for any meatloaf recipes. I finally bought a meat temperature thermometer,
so I'm not guessing or overcooking anymore.
