Grilled chicken parmagiana?

has anyone ever had this? is it good? trying to keep it healthy and would not like fry the chicken.


Answers:
Yes I have made a version..it cuts out the breading for a lower carb dinner. I grill the chicken after marinating in Italian dressing for 30 min. Then put in 10x13 cover with marinara, mozzarella cheese and Parmesan cheese and bake until bubbly.

Not sure real CP will work that way; really tough to grill chicken with breading instead of frying.

This receipe a baked in the oven that would help some.


BAKED PARMESAN CHICKEN

1/2 cup all purpose flour
1/2 cup parmesan cheese (grated)
2 tsp dried basil leaves
1 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic
1/4 cup butter
1/3 cup milk
6 split chicken breasts

Preheat oven to 400 degrees.
In 13x9in baking pan melt butter in oven. Meanwhile in bowl mix all ingredients exept milk and chicken.

Dip chicken breasts in milk and then coat in flour mixture. Dip chicken in butter then place skin side up in pan. Bake for 45 to 50 minutes or until chicken is fork tender and golden brown.

(Parmesan cheese forms a crunchy coating on this oven-baked chicken.)

Grill the chicken then top it with your cheese and sauce toss in the oven until cheese melts. Or kick it up another healthy notch and skip the cheese just add the sauce and sprinkle with parmesean cheese serve with a side salad. Yummy!

Grilled Chicken Parmigiana:

45 min 30 min prep
4 servings

2 lbs chicken breasts, cutlets
salt
fresh ground black pepper
extra-virgin olive oil
3-4 garlic cloves, chopped
1 teaspoon crushed hot red pepper flakes
1 small yellow onion, finely chopped
1 (28 ounce) can fire-roasted diced tomatoes (Muir Glen)
20 fresh basil leaves, shredded
1/2 cup parmigiano-reggiano cheese
1/2 lb smoked mozzarella cheese, thinly sliced
6 cups mixed salad greens
2 tablespoons red wine vinegar

1. Heat an outdoor grill or indoor grill pan to high.
2. Season chicken with salt and pepper; drizzle with olive oil.
3. Cook 3-4 minutes on each side and transfer to a foil-covered plate to hold.
4. Place a pan on the stove over med-high heat; add in 2 tablespoons olive oil.
5. Add in the garlic, red pepper flakes, and onion; stir/saute 10 minutes.
6. Add in tomatoes; heat through 2 minutes.
7. Wilt in the basil and season the sauce with salt and pepper.
8. Preheat the broiler to high.
9. Layer the chicken with the tomato sauce in a casserole dish; top with Parmigiano and mozzarella.
10. Brown the chicken-parmesan under the broiler for 3 minutes.
11. Place the salad greens in a bowl; dress with the vinegar and 3 tablespoons olive oil; season with salt and pepper.
12. Serve the chicken parm alongside a little salad.
