Pork Tenderloin?!

Pork Tenderloin?

I need a quick, easy, simple marinade or something to season it with. Mustard recipe?


Answers:
I use a very simple recipe and it always comes out tender and delicious. This is also a self-baste recipe.

1. You MUST rinse the the tenderloin!
Just a quick wash under the water to get the blood and other juices from the pack off.

2. Get a barbecue fork (the one with the two long tines) and stab all over the tenderloin - top & bottom. You want the seasoning to go all the way throught the meat.

3. Get some McCormick's meat tenderizer (the one in the yellow package that already has some seasoning in it).

4. Lightly sprinkle some Adobo (with or without pepper it's up to you). You don't want too much or else your tenderloin will come out salty and you won't be able to enjoy it.

5. Some Mrs. Dash or other no-salt seasoning... Put as much or as little as you like.

6. Lastly get some butter or margarine and use a spatula to cover the to of the tenderloin. DO NOT MELT THE BUTTER!! (I prefer margarine - it spreads easier & doesn't evaporate as quickly, and the vegetable oil in it helps to tenderize also.)

7. I usually get a 5 pound roast, so I usually have it in the over on 375 for about 3 hrs, but depending on how big yours is you should follow the directions on the package for how long you should have it in the oven.

I take a boneless pork tenderloin roast and pole holes in it with a knife about every 2 inches apart on one side of it and then push a garlic clove into each hole - rub a little olive oil on it and sprinkle with rosemary it wonderful.

Just bake in the oven until done

MARINADE FOR PORK TENDERLOIN

1 (8 oz.) can crushed pineapple
1 (6 oz.) can pineapple juice
2 garlic cloves, minced
2 tbsp. fresh ginger root, minced
2 tbsp. soy sauce
1/2 tsp. dry mustard
2 (3/4 lb.) pork tenderloins

Combine first six ingredients to make marinade. I like to combine these in an electric blender. Place pork tenderloins in glass bowl and pour marinade over pork. Cover and marinate for 24 hours, under refrigeration, turning tenderloins a couple of times.
When ready to cook, remove tenderloins from marinade. They may be grilled on gas or charcoal grill. They may also be baked on an oven broiler pan, in a 325 degree oven. They are done when a meat thermometer reads 170 degrees when inserted in the thickest portion of the tenderloin. When ready to serve, slice and serve.

3 cloves garlic, minced
1 tablespoon dried rosemary
1/4 chopped onion
drizzle of olive oil
salt and pepper to taste
2 pounds boneless pork loin roast
1/4 cup olive oil
1 cup white wine
1 cup chicken broth

Preheat oven to 350 degrees F (175 degrees C).
In a food processor, mix chopped onion, garlic, rosemary, salt and pepper, a drizzle of olive oil and make a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.

Place pork loin into oven. About 1/4 through the cooking process, add a little chicken broth and a little wine to the bottom of the pan, and about 20 minutes later, turn the roast. Baste with pan liquids throughout the cooking process. Pork should be done at 150 degrees F, it will continue to cook while wrapped and resting. Cook the roast for 1 and ? hours total, remove from oven and cover it with foil for about 10 minutes. I recommend using a meat thermometer, cooking time really depends on the cut and size of your meat.

I added more chicken broth and wine to the drippings in the pan, a touch of flour to thicken, and everything turned out delicious!
