What to serve with a ham & potato casserole?!

Question:

What to serve with a ham & potato casserole?

For dinner I usually have a serving of meat with 1-2 veggies on the side.
If I make a ham and potato casserole, what would you serve with it? More meat? Or is that too much? Suggestions please.

Answers:
I would just serve another vegetable. Generally a vegetable, and a starch is a good combination with any meat. You have meat, and starch already in your casserole. No sense really in having more meat. . .If you wanted to for variety that would be okay, but not necessary. . . Do a nice fresh veggie, or even some salad and rolls would be just fine. Casseroles are easy once dish meals for just that reason. If you had a salad, and finish off with a nice dessert, you're all set!

Homemade apple sauce. And/or greenbeans.

Usually with a casserole - you don't need anything else - but you could always add a salad, or green beans or something. Maybe some biscuits or rolls.

Just some veggies would top it off! Best with a green veggie for color variation!

pan fried apples:

1/4 lb. butter
1/2 c. sugar
8 Golden Delicious apples, cut up, unpeeled

Add all ingredients into a covered frying pan. Cook for about 15 minutes or until soft. Add cinnamon and nutmeg to taste. Serve warm.

I would serve a nice green salad and some Garlic bread.

I would go with either corn or peas

roasted aparagus...

jazzy green beans..use frozen or fresh. in skillet heat 2 T olive oil, add 1/2 onion slice thin or chopped, 1 clove garlic add green beans, toss to heat, add 1 can italian seasoned diced tomatoes..

a green vegetable, such as green beans, peas, maybe even black eyed peas w/ tomatoes and onion.

peas

Serve a tossed salad.

A vinegar and oil based coleslaw would fit into the menu nicely. Dessert could be sherbet or sorbet and cookies.
