Dinner is a few hours away....hmmmm..not sure what to make?

I ask this often since I am bored with the same dinner menu...what are you making...maybe I will be a copy cat :)

Tonite is Mexi nite. I get all the ingredients ready and spread out on the table for my family to build their own tacos, burritos or nachos. They put on or leave off what they want. If someone wants tacos...they have that, if someone wants a burrito...there you go. The kids love building their own food. So does the hubby. All you need is meat, beans,cheese, lettuce, tomatoes, onions, olives, sour cream, and salsa. Then get flour tortillas for burritos, corn chips for nachos, and taco shells for tacos. You can even just make a taco salad with all the ingredients, except crumble up tortilla chips for the top. MMMM yum. Tommorrow nite...make your own pizza...Boboli makes that easy and you can use some of your leftover taco nite ingredients for it.

Heres the perfect dinner for tonight:

Spinach Stuffed Chicken Breasts

INGREDIENTS:

1 (10 ounce) package fresh spinach leaves
1/2 cup sour cream
1/2 cup shredded pepperjack cheese or ricotta
4 cloves garlic, minced
4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
1 pinch ground black pepper
7 slices bacon

DIRECTIONS:

Preheat the oven to 375 degrees F (190 degrees C).
Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.
Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

Rosemary Grilled Chicken

INGREDIENTS
1/2 cup butter
1/2 cup fresh rosemary
3 cloves garlic
1 lemon, zested
1/4 cup fresh lemon juice
6 (6 ounce) skinless, boneless chicken breast halves
salt and pepper to taste
DIRECTIONS
In a food processor, thoroughly blend together the butter, rosemary, garlic, lemon zest, and lemon juice. Pour 1/3 of blended mixture into a small bowl for marinade. Cover remaining mixture, and set aside.
Lightly season chicken breasts with salt and pepper. Rub chicken breasts with the marinade mixture. Place chicken breasts on a platter, cover, and refrigerate 3 hours.
Preheat an outdoor grill for high heat and lightly oil grate. Pour half of the reserved rosemary and lemon mixture into a bowl for basting. Cover remaining mixture, and set aside for topping cooked chicken.
Grill chicken breasts 4 minutes on each side, basting with rosemary and lemon basting mixture. Remove chicken breasts from grill, and top with small scoops of the remaining topping mixture.

Tonight we're making quesadillas with leftover BBQ chicken.
Tomorrow we're having a beef & veggie stirfry with leftover steak....
