Any cooks out there?
I want to make this chicken penne bolognese dish but it has a half cup dry white wine in it. I am allergic to wine - is there anything I can substitute for this that will taste good??

Is it the grapes you are allergic to or the alcohol? There are some very good N/A substitutes on the market. You actually have to buy them in a liquor store because even though they are "N/A" they still might have a very minute quantity of alcohol in them and are being sold as a beverage. Then again, it may be the grapes alone because in cooking, all the alcohol should boil and evaporate. Apple juice is not "dry", it is sweet. Vinegar is not a total substitute either. It isn't really "dry" because that term is relative to the ammount of "sweetness" and not necessarily tartness (sour). Apple juice might work ok if you cut it with a very small ammount of balsamic vinegar.

apple juice, for real...that's what ya use....or 7UP...same ammount recipe calls for wine.
i suggest you use some type of citric like a balsamic or some fresh limes/lemons
Chicken broth is a good substitute for white wine. Use Beef broth for red wine.
Use cider vinegar. Don't use as much vinegar as the recipe calls for wine, maybe half it.
If I were you i would use either some type of juice preferably orange or apple, but you could also do a marinade for the beef using a juice or mixture of juices. both are just as effective. I have expeirence with this dish.
