What to have a side dish with Salmon cakes?

Im making Salmon cakes tonight. Any ideas what to serve with them?

my mom always made potato pancakes with salmon cakes...u can buy a mix in a box and whip em up fast, cook em along side the salmon, even
then some asparagus or sauteed spinach would be yummy!

PEAS AND CHEESE SALAD

17 oz. sweet peas, drained
1 1/2 c. ring macaroni, cooked
4 oz. cheddar cheese
1/2 c. chopped onion
1/4 c. chopped celery
2 tbsp. chopped pimiento
1 c. salad dressing or mayonnaise
1/2 tsp. salt
1/4 tsp. hot pepper sauce
Dash pepper

In large bowl, combine peas, macaroni, cheese, onion, celery and pimiento. Combine salad dressing with remaining ingredients. Pour over pea mixture; too lightly until well blended. Cover and chill several hours.

Rice pilaf would be nice. And green beans.

For the rice pilaf, slice up some mushrooms, if you have them, and some onions.
Saute in a little butter or olive oil until the onion is clear.
Pour in the rice and stir around.
Add chicken or vegetable broth (1 3/4 c per 1 c of rice)
bring to a boil, cover, and simmer on low for 20 minutes.

Mac and Cheese....yum!

How about some rice pilaf with Lots of green herbs mixed in.
Or flatbread slathered with pesto & grilled and steamed broccoli on the side.
That's what I had last night with parmesan crusted salmon. Mmmmm...

Oh, sound great. Why not make a fresh salad with it. Greens with tomatoes, pineapple, cucumber. Or make a pickles cucumber side. Have the cucumber sliced and add some white vinegar and sugar. leave for a half an hour, drain the vinegar, it's very refreshing, I make it a lot.

A Tomato and Cucumber Salad...just mix together Tomatoes, Cucumbers, Onions, and your favorite Italian dressing. Serve chilled. It is a nice contrast to the warm salmon cakes and a very nice flavor too!

Something a little tangy is what sides best with salmon cakes! The slaw idea is a great one - a nice way to add color and texture to your plate! I also like to do a quick corn salsa as a side...a little fresh corn (or frozen if you have it), some diced peppers, onions, garlic, jalepeno, a little salt and pepper...toss with a little vinegar...yum!
