Purchase a package of powdered or liquid pectin at the grocery market. Instructions for making blackberry jam, jelly and preserves are inside the package. Instructions for making jams, jellies and preserves from other fruits and berries are also in the package. I prefer the powdered pectin. Others prefer liquid pectin. Powdered pectin is extracted from citrus fruits. Liquid pectin is extracted from apples. Jams, jellies and preserves can be made from most fruits and berries without the added pectin, but the cooking times are much longer and the probability of the jam or jelly not "setting up" is higher. Plus the additional cooking time makes the fruit bits that are in jams and preserves very soft, thereby defeating the purpose of making them.

BLACKBERRY JAM

2 qts. fresh blackberries (1/4 of which are unripe)
6 c. sugar

Wash berries and cook in saucepan over moderate heat until juice begins to flow and berries are soft. Run through a food mill to obtain juice and pulp. Measure out 4 cups of juice and pulp mixture and place in preserving pot. Bring to a boil. Add sugar and cook over moderate heat until candy thermometer reaches about 221 degrees F. (about 30 minutes). Pour into jars and seal. Extra juice and pulp may be kept in refrigerator for 2 weeks or frozen for making another batch of jam later. Yield: 6 half pints.
