Cheese soup recipe?
I need a good recipe for cheese soup which doesn't require either beer or wine. If nobody has one, what do you suggest I use as a substitute for the beer or wine? (And yes, I KNOW that the alcohol cooks out of it) I really prefer NOT to cook with any sort of alcohol, for religious reasons.

Cheese Soup
3 cups vegetable broth
3 potatoes, cubed
1/2 cup chopped onion
1/2 cup chopped carrots
1/4 cup chopped celery
5 slices fat-free American cheese
1/2 cup skim milk
1 tablespoon hot pepper sauce
salt and pepper to taste
3 tablespoons chopped fresh parsley
In a medium saucepan over high heat, combine the broth, potatoes, onions, carrots and celery. Bring to a boil and reduce heat to low. Cover and simmer about 15 minutes, or until potatoes are tender. Mash lightly with a potato masher.
Add American cheese, milk and hot sauce and continue cooking over low heat until cheese melts, stirring occasionally. Add salt and pepper to taste. Garnish with fresh parsley and hot pepper sauce, if desired

4 cups chicken broth
1 cup water
1 cup half-and-half
4 ounces shredded Cheddar cheese
1/2 cup all-purpose flour
1/2 teaspoon dried onion flakes
1/4 teaspoon ground black pepper
4 cups broccoli florets
In a large pot over medium high heat, combine the broth, water, half-and-half, cheese, flour, onion flakes and ground black pepper. Whisk all together to break up any lumps.
Bring to a boil and reduce heat to low. Stir in the broccoli and simmer for 15 to 20 minutes, or until broccoli is tender.
CHEDDAR CHEESE SOUP
1/2 onion
1/2 c. butter
2 c. water
4 c. chicken broth
4 c. milk
2 tsp. Worceshire sauce
1 15 ounce jar cheese whiz
4 cups mild cheddar cheese (more or less depending on how cheesy you want it)
2 cans white potatoes (optional)
Cook onion in butter until tender. Add chicken broth, water, milk, and potatoes if you desire. Bring to a boil. Reduce heat to medium, and add Worceshire sauce, cheese whiz, and cheddar cheese.
Stir until completely melted. Add white flour for a thicker soup and sprinkle cheese on top. Serve hot.
