What can I do with leftover potroast meat?
I made a potroast this week and I'm getting tired of the leftovers. Does anyone have some good ideas of how I can use the leftovers to make different?

What I do is have hot beef sandwiches with gravy or make some rice and add chopped up pot roast with some mushrooms or whatever veggies you want and you have beef fried rice. Also you can freeze the leftover pot roast that you have and have it another day!

You could make a stew with the meat,and add carrots,celery etc.
My hubby can make sandwiches out of anything and he love potroast on a roll with a slice of pepperjack.
Or use two forks and shred it, add BBQ sauce and use for sandwiches.Yum!

MMm Yes! Get some sub rolls. Heat up the meat and throw it on th rolls. and dip it in the juice. It's called Au Jus, and they're sooooooooo good! You can even throw some fried onions and provolone on there too!

HASH HOMEMADE LEFTOVER DELIGHT
Leftover roast beef, cubed
White potatoes, cubed (equal to meat portions)
1 lg. onion, chopped into small cubes
Garlic powder, to taste
Onion powder, to taste
Salt and pepper
Water
1 large pot, with all ingredients. Cover with water, cook on low flame until onions and potatoes are done adding water to make soupy as hash liquid cooks down.
Bake 1 can biscuits. Fix a salad and a favorite drink simple meat for busy moms.

LEFTOVER ROAST BEEF SALAD
1 c. finely chopped roast beef
1/2 c. diced celery
1 green onion, minced
1/4 to 1/2 c. diced Cheddar, Swiss or Monterey Jack cheese
1/4 c. mayonnaise
2 tsp. sweet pickle relish or 1 sm. dill pickle, finely chopped
1/2 tsp. prepared horseradish (optional)
2 tbsp. catsup
1/4 tsp. salt
Few grains pepper
Mix all ingredients together. Serve on lettuce leaf or between bread slices.
Serves 2.
Give it to the dog. Or a homeless man. They both eat trash.
Make roast beef sandwiches, grill it with some shreaded cheese on it, that could be good. Or turn it into beef stew with carrots and potatoes in a gravy. Or use the meat to and make beef stroganof with egg noodles and mushrooms.

Put with mayo, mustard pickles and a slice of cheese and onion and have a yummy sandwich. you can add some salt and pepper to taste or a little horseradish, your taste buds. Or just shred and add to some potatoes chopped fine and a bit of onion and make some gravy for toast.
Freeze it. Put it in a container with the gravy and freeze it until you want to eat it. It keeps very well in the freezer.

You could also make meat pies with them.
You can also devide it to serving portions and freeze those. Then you can keep it in the freezer until you will get "unbored" of it. Then just pop it in the microwave or in the oven (just make sure that the food is piping hot throughout before you eat it.

BEEF POT PIE
1 pkg. stew meat or left over roast beef
1 can cream of mushroom soup, undiluted
1 1/2 c. soup broth
Bouillon low salt (beef)
Potatoes, carrots, peas, cut up and parboiled
Use an all ready pie crust for top
Simmer meat until done or cut up left over roast. Cut into small pieces and place in bottom of greased casserole dish. Mix soup broth with soup. Add precooked vegetables. Salt to taste. Dot with butter. Pour into casserole over meat. Place your all ready pie crust on the top and bake at 350 degrees for 1 hour.
BARBEQUED BEEF SANDWICHES
1/2 c. chili sauce or catsup
1/2 c. brown sugar
3 tbsp. Worcestershire sauce
1 tbsp. hot pepper sauce
1 tbsp. paprika
1 tsp. salt
1 tsp. pepper
2 lbs. left over, sliced pot roast
1/2 c. lemon juice
Combine chili sauce or catsup, lemon juice, sugar, Worcestershire sauce, hot pepper sauce, paprika, salt and pepper in large saucepan. Bring to boil. Reduce heat and simmer 15 to 20 minutes, stirring occasionally. Add meat. Simmer additional 15 to 20 minutes.
Taste and adjust seasonings.
Serve over hamburger buns.
Saute onions in a little oil and butter, add some garlic. Add a couple of tablespoons of flour, stir until flour is cooked. Add a can of beef broth, add your cubed leftover vegetables and beef, Cook and stir, it will be thicken and bubbly. Add some frozen peas or mixed vegetables to freshen it up. You can let it cool and pour it into a greased 9X13 and top with pie crust for a family sized pot pie or top with biscuits and bake or just serve over biscuits.
my dad used to do this and it was tasty and easy.
just mince up the beef along with the veggies you might have cooked along with it. make sure not to use any of the gravy though. next salt and pepper it and add an appropriate amount of mayonnaise to make it the consistency of tuna or chicken salad. you can eat it plain but it really tastes good on bread, a pita, or a roll.

cut into strips, roll them in a corn tortilla,fry them in a little oil and you have a taquito. make some rice and beans, salsa and guacamole .good eat in.
