I made this one about two months ago & they were GREAT...If you do not care for coconut in the crust, you can easily omit it... I, however, LOVE coconut, so I did use it in the crust...ENJOY!!!

Lemon Squares

36 squares 1? hours 20 min prep

2 1/4 cups all-purpose flour
1 cup chilled unsalted butter, , cut into small peices
1/2 cup powdered sugar
1/2 cup sweetened flaked coconut
2 cups sugar
4 large eggs
1/2 cup fresh lemon juice
1 teaspoon baking powder
powdered sugar

Preheat oven to 350F degrees.
Butter 13x9x2" baking pan.

In food processor combine 2 cups flour, butter pieces, 1/2 cup powdered sugar and the coconut.
Process until moist clumps form.
Press onto the bottom of the prepared pan.
Bake about 20 minutes, until edges are golden.
In a large bowl, whisk together 2 cups sugar, eggs, lemon juice, baking powder and the remaining 1/4 cup flour until well blended.
Pour over hot crust.
Bake until topping is set and light brown, about 25 minutes.
Cool in the pan on a wire rack.
Cut into squares and dust tops with powdered sugar.
Can be made 1 day ahead.
Cover with plastic wrap.
Makes 36 squares.

Tried and true... always perfect!

2 cups sifted all-purpose flour
1 cup confectioners' sugar
1 cup butter, melted

4 eggs
2 cups white sugar
1 teaspoon baking powder
1/4 cup all-purpose flour
5/8 cup lemon juice

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
In a medium bowl, stir together 2 cups flour and confectioners' sugar. Blend in the melted butter. Press into the bottom of the prepared pan.
Bake in the preheated oven for 15 minutes, or until golden. In a large bowl, beat eggs until light. Combine the sugar, baking powder and 1/4 cup of flour so there will be no flour lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice. Pour over the prepared crust and return to the oven.
Bake for an additional 30 minutes or until bars are set. Allow to cool completely before cutting into bars.

Bottom:
1/2 cup butter or your favorite substitute
1 cup all-purpose flour
1/4 cup confectioners' sugar

Topping:
2 eggs
1 cup sugar
2 tbsp lemon juice
2 tbsp flour
pinch of salt

confectioners' sugar to sprinkle





1. Preheat your oven to 350°F.

2. To make the bottom, cut the butter into the flour and confectioners' sugar and press into a 9 inch square pan. Bake 20 minutes or until light brown.

3. Combine the remaining ingredients to make the topping.

4. When the bottom is done, and still hot, pour the topping over it and continue baking for about 25 minutes.

5. Remove from oven and sprinkle top with confectioners' sugar.

This is a good, classic recipe. If you're in a hurry, there are also very good mixes available at the store.

LEMON SQUARES
1 c. all-purpose flour
1/2 c. butter, softened
1/4 c. powdered sugar
1 c. granulated sugar
2 eggs
2 tsp. grated lemon peel (optional)
2 tbsp. lemon juice
1/2 tsp. baking powder
1/4 tsp. salt
Extra powdered sugar

Heat oven to 350 degrees. Mix flour, butter and 1/4 cup powdered sugar together. Press evenly with hands in bottom of ungreased square pan 8x8x2 inches, building up 1/2 inch edges. If dough is sticky, flour fingers. Bake 20 min.

Beat granulated sugar, eggs, lemon peel, lemon juice, baking powder and salt together until light and fluffy, about 3 minutes. Pour over hot crust. Bake just until no indentation remains when touched in center, about 25 min.

Cool; sprinkle with powdered sugar. Cut into 2-inch squares.
