Amish Potato Chips?
Does anyone have the recipe for Amish or Minonite chips? I was in Lancaster Pa and bought a bag and it was a paper sack and were so delicious. They are made with lard but wondered if you can use canola and still get that good taste and crisp. Can anyone help me with this recipe... please

Yes, you can use canola oil or vegetable oil, just remember to slice your chips thin, don't put too much in per batch or they'll bring the oil temperature down and all you'll have is a big oily, sticky mess; drain them on paper bags and salt with a small grain sea salt while still hot and draining! Make sure the oil is hot, (just to the smoke point) but not too hot! Have fun and enjoy!
cut potatoes very thin (as thin as you can get them because this is where the flavour and the crispness is determined)...place on cookie sheet and spread melted butter over them on both sides....add a little salt or any other flavour and bake at 400F for about 5 to 8 minutes...do not let them burn.....place on paper towel when you are done....store in a paper bag if you are not eating them immediately...
