Chicken is always easy. Try this:
Cut up a chicken (or buy it cut) add salt and pepper on both sides and fry it until golden It doesnt have to be thoroughly cooked, just golden. Remove from pan and in the same pan, fry a lot of sliced onions, about 5 medium. Sprinkle about 3 tablespoons of sugar on them and let them caramelize. They will turn a delicious pale golden color and appear sticky. You can add a couple shots of honey if you fancy it.
Add about 1 1/2 cups of Apple cider vinegar and 1 cup of chicken stock and put the chicken pieces back in. Let it come to a boil and reduce the flame and let it thicken. The smell starts very strong, but when it reduces, it becomes absolutely delicious. Mash some potatoes to accompany it, You can also boil some green beans to complement the meal. He will lick his fingers and love you more!
Chicken with a brie cheese sauce over bow tie pasta =)
you might not like the brie though, its an aquired taste i guess?
try a pot roast. Many people simply go for meat and potatoes. The best roast in my family is very simple. Rub salt and pepper into the meat and put it in a crock-pot. On top, add a cut-up onion. Sprinkle on 1/2 package of dry onion soup mix and a can of cream of mushroom. Close and turn on low for 8 hours. Do not add liquid. Add any side dishes you want from garlic mashed potatoes to steamed frozen veggies. If you need recipes to follow, use www.allrecipes.com and use their search engine with any ingredient you choose.
How about cornish hens? They are so easy to make and they look very impressive.

Most everyone likes lasagna and a lettuce salad
CINDY'S LASAGNA
This is a recipe I created through experimentation. I knew a woman who always asked me to cook it for her, she said she had tried lasagna from here to Italy and it was the best she had ever tasted. This is a recipe that makes enough for a large family gathering!
1 package of lasagna noodles
1-1 1/2 jars thick spaghetti sauce
1/2 chopped green pepper
1 large chopped onion
1 large container Ricotta or small curd cottage cheese
2 cups Parmesan cheese, freshly grated
1/2 tsp. cracked black pepper
2 eggs
1/4 cup freshly chopped parsley
1 large package (3 cups} fancy shredded cheese
2 cups mozzarella cheese
1 lb. Italian sausage cooked and chopped
1 lb. ground beef cooked and chopped, then mix meats together
2 cans of mushrooms slices
Sauté onions and peppers in butter or olive oil.
Combine Ricotta or cottage cheese with eggs, Parmesan cheese, cracked black pepper and parsley.
Cook noodles rinse in cold water, drain and separate, set aside, preheat oven to 375°F.
In a large deep non-stick baking pan, layer bottom with spaghetti sauce, about two cups. Next, place a layer of noodles, then sauce until lightly covered, then a thin layer of Rictotta or cottage cheese mixture, meats, onions and peppers, and mushrooms, sprinkle remaining cheeses in layers, one on top another.
When you lay your last layer of noodles, place a thin layer of sauce and (make sure you have saved enough cheeses for the top) over the layer of sauce layer cheeses with the mozzarella on top, bake at 375°F uncovered until the top is golden brown and bubbly
