Question:

What is some good cheap innovative salad recipies?

Answers:
For starters, there are so many types of salads, and so many things to use, that it may be overwhelming! There are green salads with various toppings, there are pasta salads, there are salad spreads such as tuna salad, and there are veggie salads, such as a tomato salad, or olive salad. Here are some easy, and mostly cheap ones, with a variety of ingredients.

Green salad and salmon or tuna- Pop open a can of tuna or salmon, and flake well (that means mush it around until the meat is loose, and no longer packed). Serve over a bed of greens, such as lettuce or spinach, and top with croutons, parmesan cheese, a little tomato, and a lemon based dressing, or something a little twangy, like italian.

Green chef salad (this is the one I always make)- place on a plate, some lettuce, cottage cheese, cheddar cheese, diced tomato, diced turkey deli meat, croutons, and ranch dressing. Yum! Also try hard boiled egg, ham, red onion, mushrooms, and olives.

Taco salad- serve a bed of lettuce topped with ground beef, black beans, chedder cheese, onion, tomato, salsa, and ranch dressing. You can toss black beans into other salads, too.

Italian chicken salad- serve strips of grilled chicken or chicken from a can over lettuce and topped with tomato, italian blend of cheese, parmesan or other italian croutons, red onion, and italian dressing.

Veggie deluxe- Lettuce, spinach, tomato, green and red peppers, black olives, mushrooms, red onion, avocado. Serve with your fave dressing. Also try adding some cottage cheese or hard boiled egg.

Tomato basil salad- Thinly sliced tomato, shredded mozzarella, fresh basil, olive oil, salt, and pepper. Place the tomato in a bowl, sprinkle with cheese and basil, season well with salt and pepper, and drizzle in some oil.

Greek salad- Cherry tomatoes cut in half and diced, seeded cucumber, feta cheese, olive oil, and oregano. Place tomato and cucumber in a bowl, crumble over the cheese, drizzle in oil, and sprinkle with oregano. Mix well and serve.

BLT salad- Cook up some bacon and crumble. Mix 1/2 cup mayo with a little milk until it reaches a normal salad dressing consistency. Toss the bacon over some lettuce. Add in some tomato (cherry tomatoes cut in half, if you would like), season with salt and pepper, and toss with the mayo dressing. Mix until well coated, and serve.

Spinach and orange- serve canned mandarin oranges over spinach, topped with some olive oil, balsamic vinegar, and french fried onion rings.

And last, one of my "specialties"- cottage cheese, cheddar, diced deli turkey, cherry tomatoes, and cucumber, smothered in ranch dressing.

As always, be creative, experiment, and find something yummy!

Hope this helps.

I like to do wedge salad variations, like a Italian made with panchetta chunks and Italian blue cheese ... You can do a 'taco wedge' with carne asada and a pico di gallo. Salad wraps are good, like big pieces of romaine with the whole salad wrapped up as a filling.

Do you like pea salad - it would not cost much at all.
