Good cake or biscuit recipes to make with my young neices?
Any ideas on fun and easy recipes to make with my two neices (aged 5 & 4) who are coming to stay?
Answers:
you can make cornflake cakes as already suggested but to make it a bit more interesting add a little butter to the melted chocolate and other ingredients like chopped biscuits, sultanas, chopped nuts, chopped cherries etc
The Jello Cake is fun to make!!! Check out Jello.com for recipe!!
PINEAPPLE UPSIDE DOWN CAKE
2/3 cup butter
3/4 cup brown sugar
Place the butter and brown sugar in a frying pan and melt until it boils or bubbles. A cast iron pan works well because it's heavy and will be less likely to scorch.
1 can pineapple slices
maraschino cherries (enough to fill centers of pineapples)
Place pineapples in the butter and sugar mixture. Put cherries in the center of the pineapple. Cut the slices of pineapple into halves and line the sides of the frying pan with them (standing up on edge).
Prepare a box of yellow cake mix following the directions on the box to mix the batter (do not bake in a separate pan; follow instructions below).
Pour the batter over the pineapple and cherries.
Bake at 350°F degrees. When the cake is done, loosen the edges with a butter knife. Remove from heat and allow to sit five minutes, then turn it upside down on a serving dish.
Optional: Instead of using a cake mix, you can prepare the batter from scratch using the recipe below, or any recipe for yellow cake.
Scratch Cake:
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
2/3 cup sugar
1/4 cup milk
Combine ingredients and beat 1 minute. Pour batter over pineapples and cherries (same as above). Bake at 350°F and follow same steps as above.

Chocolate chips
Cornflake cakes are a big hit with little ones this age and very easy.
Melt a large bar of cooking chocolate either over a pan of boiling water(you, not them, lol).
Add lots of cornflakes or rice crispies and spoon into baking cases, then put in the fridge to set,Voila!
This one is fun & safe for any age. Just get instant pudding, use 1 3/4s cup of milk, separate into paper cups, add a popsickle stick & freeze. They taste better than regular fudgesickles & you get more variety.
Another goodie is mix confectionary sugar with softened butter until pie dough consistency. Put some of the sugar on wax paper & roller & roll out in a rectangular shape. Spread peanut butter all over the top.
Use the wax paper at the bottom to roll it into a log. Slice & eat.
Neither take long or pose any danger. But boy do they taste good & leave alot of good memories.

Rice krispie cakes. Always a hit

This really looks nice in a glass pyrex dish or a trifle bowl.

and prepare pudding according to box.
When cake is cooled.
Layer as follows:
half the cake - crumbled
half the pudding ( 2 boxes prepared)

* If you want you can sprinkle oreo crumbs, heath bars, and chocolate chips on the cool whip layers. On the final cool whip layer you can drizzle melted chocolate and sprinkle oreo crumbs and chocolate chips. I added oreo cookie crumbs and leftover melted chocolate in between the layers.
EDIT: I would change the name of this dessert to CHOCOLATE OVERLOAD. A kid friendly name =0)
