My boyfriend has been away for over a month traveling for business. I'd like to make him something special that's inexpensive yet unique. Any ideas?

Can be made for less than a cheap meal out.

About the only semi-expensive thing in this recipe is red wine, and there are so many affordable ones out there now. This is a recipe that I wowed my husband with and its easy, comforting, and you can do a "Lady and the Tramp" with it!

It's from Semi-Homemade with Sandra Lee and it will be in my recipe box for years to come. Not your average spaghetti and meatballs! Serve with some bread and a salad and brownies for dessert and its a simple meal to welcome him home to. Hope this helps!

4 tablespoons olive oil
4 tablespoons butter
2 tablespoons minced garlic
1 package pre-sliced mushrooms
1 jar pre-peeled garlic cloves
1 1/2 pounds lean ground beef
1 jar mushroom marinara sauce
2 tablespoons Italian seasoning
2/3 cup red wine (Merlot or Cabernet)
1 box spaghetti noodles
Salt

Heat olive oil and butter in a large skillet over medium heat. When butter melts, add minced garlic and saute for approximately 20 seconds. Add mushrooms and pre-peeled garlic cloves and saute for approximately 3 minutes. Add ground beef and saute until brown. Add marinara sauce, Italian seasoning, and red wine. Stir to combine, cover pan, reduce heat to low, and simmer for approximately 15 minutes.
Meanwhile, cook noodles in a pot of boiling, salted water until al dente, about 8 to 10 minutes. Drain and then toss the pasta with the sauce. Serve immediately.

This may or may not be your taste, but if it were me, this is what I would do. A simple three course meal with wine will knock almost anyone's socks off.

1. Appetizer or Salad. You can buy salad in a bag at your grocery store, but an actual appetizer would make it look like you put a lot more effort in to it. Fried green tomatoes is an easy appetizer.

2. Entree. Buy two boneless chicken breasts. Cut them open, but not in half. Take lemon pepper and blackened seasoning and rub the seasoning on the inside.(Go light on the lemon pepper as it is strong) Put them in a baking dish and pour a small can of chicken broth and small can of cream of chicken soup over them. Add ten dashes of hot sauce. Add water until the chicken breasts are submerged under liquid. Bake at 375 until done.(Around 35 to 40 min) While the chicken is cooking, you can cook dirty rice. The supermarket will carry packets of dirty rice, and all you have to do is boil it. While the rice is cooking, you can saute the vegetables. Buy fresh broccoli, cucumber, and squash. Put one stick of butter in a frying pan, and add one cup of water. Put the veggies in the butter/H2O mixture, and add a large amount of the blackened seasoning. Saute until veggies soften a little, but still hold there shape.

3.Dessert. Making a dessert for two is tough, but most grocery stores have a pastry/baking department. They usually sell pies by the slice. To make things a little kinky, just buy a can of reddi whip, and make yourself the dessert.

4.Wine. With this meal, I would recommend a Pinot. If you prefer white, go with a pinot grigio(EccoDomani is good but inexpensive). If you prefer red, go with pinot noir(Mirrasou is good but inexpensive).

Inexpensive, special and unique. This meal will be about 1 hr 15 min prep time. Start with the chicken. When it's in the oven prepare your dessert and set it in the fridge. With 30 min to go on the chicken start your rice. 5 min to go on the chicken turn on the heat under the green beans. When you pull the chicken out of the oven put the tomatoes in with the green beans and cook that as you put the chicken and rice in serving dishes. Dish the Green beans and Tomatoes and serve.

Mushroom Stuffed Chicken Breasts
? lb fresh mushrooms
? tsp thyme
? tsp garlic powder
1 Tbls olive oil
? cp honey
? cp balsamic vinegar
4 skin on chicken breasts, rib bones and excess skin trimmed away, rinsed and pat dry
1 Tbls cornstarch dissolved in 1 Tbls water
In a food processor, combine the fresh mushrooms, thyme and garlic, continue to process until all is minced. Just dice it all up really well if you don’t have a food processor. Heat oil in 12” skillet over med-high heat. Add mushrooms mixture; sauté until nearly all moisture has evaporated, 5-7 min.
Mix honey and vinegar in a small bowl. Adjust oven rack to lowest position and heat oven to 425*. Spray a heavy lipped cookie sheet with non-stick cooking spray. Brush with half of the honey-vinegar, salt and pepper. Turn breasts over. Push fingers under skin to make a pocket; stuff with mushroom mixture. Again brush with honey-vinegar mixture and season w/salt and pepper. Being careful not to crowd, arrange breasts on cookie sheet so thickest ends point outward.
Roast in the pre-heated oven until golden brown, adding a small amount of water if necessary to keep pan drippings from burning, 45 min or until juices run clear. Pull from oven and let it sit 5 min for the juices to evenly distribute.

Mushroom Rice
1 cp Minute Rice, brown is best
1 cp chicken broth
1 ? cps mushrooms, sliced
? cp onion, diced
1 tsp basil
? tsp oregano
1/8 tsp pepper
Spray med frying pan w/cooking spray. Stir fry mushrooms over med heat. (A little liquid will cook out of the mushrooms, when it is absorbed back into them, they are done.)
Add the broth, rice and herbs to the pan and bring to a boil. Simmer until the rice is done, 15-20 min. Stir lightly and serve.

Green beans & Tomatoes
1 can green beans, drained
1 large tomato
In a med frying pan, over med-low heat fry the green beans lightly for 3-5 min. Chop the tomato and add it to the green beans. Cover and cook an additional 3 minutes. Serve immediately. The tomato should be barely cooked. Do this at the last minute.

Chocolate Dipped Strawberries
Baker's Dipping Chocolate (or other brand)
Strawberries
Follow the directions on the chocolate to heat it. (Microwave and stir, repeat till completely melted.) Clean and dry the berries with paper towels. Dip them into the melted chocolate. Lay on a plate and chill to set the chocolate.
