Leftovers - wild rice salad?

I made way too much wild rice salad. Any real suggestions for the leftovers? Thank you!

You could do a couple of different things with it.

You could butterfly some pork chops, add some brie cheese chunks to the rice and stuff the chops and drizzle with olive oil and salt and pepper, bake at 350 until pork is done about 45 minutes. The cheese and oil will keep the rice from drying.

You could do this with chicken as well.

You could also do it with a round steak, just put stuffing on one side and "roll" it up, secure with oven twine, brown and bake. Serve cut into 2 inch pieces and cover wiith gravy.

You can also use different things to the rice, apples, pears, walnuts, different cheese, be original.


Or for something lighter, get some red and green peppers and add some red onion and cheese to the rice with a little olive oil and stuff the peppers and bake at 350 for about 45 minutes, covered.

You could do an appetizer as well. Get some bibb lettuce place in indivdual leaves and place a scoop of re heated rice in the "pocket" end and let people roll them up for a yummy "egg-roll" .

Or make meatballs. Mix it with ground round or turkey or chicken, a little olive oil. Make balls and brown in olive oil. Then bake for 25 minutes at 400. Serve with brown gravy and pasta.



Have fun with it, you will find something you like.

onigiri!!! and some sushi dressing, and roll into a ball with a plastic wrap, then add a strip of nori (optional) and enjoy!
how about a pie type thing... bake it in a pan with sheeted eggplant, and feta chesse

Get some of those pastry wraps and make up some rice rolls and drop into the deep fryer.
(you could curry the rice first)

Roll some of it in a wrap or stuff into a pita with slices of grilled chicken for a quick lunch.
