Louisiana dish called yakima or yakama (possible spelling).?

Does anyone know how to fix a Southern Louisiana dish called Yakima/Yakama ( possible spelling). You can make it with any time of meat, boiled eggs ( that's all the ingredients I know). It taste good. i am in desperate need of a recipe.....Thank you.

Are you perhaps thinking of Jicama?

Sausage & Tomato Jumbalaya

1 pound sausage (or chicken or shiimp)
1 med. can either Rotel or plain stewed tomatoes
1/2 cup uncooked rice
1 med onion , chopped
1 stalk celery , chopped
2 cloves garlic, chopped
2 tbls. oil or butter
1 cup water
Salt and pepper to taste

Slice sausage crosswise and chop onion, celery and garlic. In deep skillet add a little oil or butter and saute` onion, celery until onion is tender or clear. Remove from skillet. In same skillet add sausage and cook on medium heat until sausage is brown. Pour 1 cup water over browned sausage , add onion, celery, garlic , tomatoes , and rice. Salt and pepper to taste. Cook on low heat about 30 minutes or until rice is tender. You may add a little water if needed . When cooked this should be just a little juicy.

For a spicy kick , add your favorite hot sauce or red pepper.

Here is a recipe for a YAKIMA apple coffee cake.

YAKIMA APPLE COFFEE CAKE

1/2 c. butter
1 c. sugar
1 egg
1/2 tsp. vanilla extract
1 tsp. grated lemon peel
2 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. soda
1/4 tsp. salt
1 c. sour cream
1 1/2 c. finely chopped Golden Delicious apples
1/2 c. chopped walnuts
1/2 c. dried currants

TOPPING:

Golden Delicious apple slices
2 tbsp. sugar
1/2 tsp. cinnamon

Cream butter and sugar. Blend in egg, vanilla and grated lemon peel. Sift together flour, baking powder, soda and salt. Add to creamed mixture alternately with sour cream. Fold in chopped apples, walnuts and currants.
Turn into greased and floured 10 inch tube pan. Arrange apple slices on top. Sprinkle with combined 2 tablespoons sugar and cinnamon. Bake at 350 degrees 1 hour or until cake tests done. Makes 12 servings.
